Since ever i tried this sambhar bhath with couscous, i have prepared already twice as this incredible healthy one pot meal became our family favourite. A small packet of couscous was sitting in my pantry for a while and it was reaching its expiry date soon. Since i dont want to trash them, i thought of finishing them by dishing out an easy, simple and quick version of one pot meal with it. Hence i tried this ultimate Couscous Sambhar bhath for this week's blogging marathon as am running One pot meal for summer as this dish calls for a pressure cooker.
Pressure cooker, you can dish out this simple dish with less time than you can imagine with this ultimate gadget. Serve it warm with some potato chips, whoever says no to usual sambhar rice will definitely finish their whole plate within few minutes. With loads of colourful veggies and toor dal this fantastic dish tastes simply delicious, a comforting food for peoples like me. A prefect dish to give a try if you dont want to spend more time in your kitchen especially during summer.
2cups Couscous
1/2cup Toor dal
2cups Mixed diced veggies (carrot,beans,peas,zucchini,potato,green beans,chow chow,brinjal)
1/2cup Tamarind extract
1tbsp Sambhar powder
1/4tsp Turmeric powder
Salt
Oil
1tsp Mustard seeds
1/2tsp Cumin seeds
2nos Dry red chillies
Few curry leaves
1no Onion (chopped finely)
2nos Tomatoes (chopped)
Few chopped coriander leaves
Heat enough oil in a pressure cooker,add the mustard seeds,cumin seeds,dry red chillies, curry leaves and let them splutters.
Now add the chopped onions,chopped tomatoes,cook until the onions turns transculent and tomatoes turns mushy.
Immediately add the vegetables,salt and sauté for few miutes.
Now add the tamarind extract,sambhar powder,turmeric powder, a cup of water, cook everything for few minutes.
Add washed dal to the cooking veggies,finally add 3 cups of water,close the pressure cooker and cook for upto 3 whistles.
Once the pressure get released, add the washed couscous and cook until the couscous absorbs the water.
Add the chopped coriander leaves to the sambhar bhath,give a stir.
Sambhar bhath should be watery,but once cooled this dish will turn thick..
Enjoy with chips,fryums or papads.
