Whole Wheat Jaggery Cake

I have been trying to add jaggery in our diet often especially the palm jaggery. Recently i got a packet of organic jaggery from my nearby organic store and it tempted me to give a try to a cake. Hence i baked this easy breezy wholewheat jaggery cake. If you are a reader of my space, you might know very well that i wont forget to add chocolate chips if am trying something new in baking. Obviously i couldnt resist to add some chocolate chips in this simple cake. An excellent cake to give a try if you want to keep yourself away from sugar. However, this cake will come out bit dark in colour apart from it, you wont miss anything. I loved the flavor of this cake and none noticed that i prepared the cake batter with the humble ingredient 'Jaggery'.

Jaggery Wholewheat Cake
This cake is not eggless but its butterless, i used vegetable oil and yogurt in this cake. If you want to skip the two eggs i have added in this cake, please just go on by replacing the eggs with applesauce. A prefect snack cake to enjoy with your cup of coffee or tea. Since this cake have chocolate chips, kids will just love this cake. Am running this week's blogging marathon with Easy sweet treats as theme. Since this cake takes hardly less than half an hour to get ready, i couldnt resist to post under this theme.

Healthy Jaggery Cake

1cup All purpose flour
1cup  Whole Wheat flour
1cup Powdered Jaggery
2 Eggs
1/2cup Vegetable oil
1tsp Vanilla extract
1/3cup Yogurt
1tsp Baking powder
1/2tsp Baking soda
pinch Salt
1/2cup Chocolate chips

Take the flour, baking powder, baking soda in a bowl, sift twice and keep aside.

Take the eggs, vegetable oil,vanilla extract, yogurt and powdered jaggery in a bowl, whisk until the mixture turns smooth.

Now slowly add the dry ingredients to the wet ingredients. Mix with a spatula, dont overmix.

Whole wheat jaggery cake

Fold gently the chocolate chips and pour the cake batter in a grease loaf pan.

Bake for 20-25minutes until a skewer inserted comes out clean.

Let the cake gets cool completely. Slice and enjoy.
