Bittergourd Peanut Stir Fry/ Pavakkai Verkadalai Masala

Bittergourd, this vegetable is not a favourite of many but trust me its my favourite vegetable since i came to know how healthy this vegetable is. Obviously whenever i go to Indian groceries i dont forget to grab them. Back home, i dont forget to dish them as many delicious dishes out of them. I have been looking for a chance to cook this bittergourd differently since a while and finally i decide to go with this fantastic masala prepared quickly with peanuts. Though this dish will tastes bitter, dont forget to mix this dish with some hot steaming rice and enjoy with papads. You will definitely love this fantastic stir fry.

Bittergourd Peanut Stir Fry

Am running this week's blogging marathon with quick and delicious stir friesas theme, needless to say this quick  bittergourd peanut stir fry goes to this week's theme. If you want to cook something different with bittergourd dont forget to give a try to this easy breezy dish.Also if you want to cook this same dish with sesame seeds, just replace the peanuts with roasted sesame seeds.

Bittergourd Peanut Stir Fry, Pavakkai Verkadalai Masala

1cup Bittergourd (chopped finely)
1no Onion chopped
1no Tomato chopped
1/2cup Roasted peanuts
1/2tsp Red chilly powder
1/2tsp Coriander powder
5nos Curry leaves
1/2tsp Mustard seeds
1/2tsp Urad dal
Salt
Oil

Heat oil in a kadai, add the mustard seeds and urad dal, let them splutters.

Add the chopped onion and chopped tomatoes, curry leaves, saute them until they get cooked.

Add the bittergourd pieces to them, saute for a while, now  add the redchilly powder, coriander powder and salt.

Cook everything in medium flame. Meanwhile grind the roasted peanuts as coarse powder.

Pavakkai Verkadalai Masala

Once the bittergourd pieces gets well cooked, add the roasted peanuts powder and toss everything well.

Serve immediately with hot steaming rice.

I was going to bookmark this recipe till I saw the word prawns. What do you suggest to replace prawns. Sounds yum.

We usually make it this way, though I don't touch bittergourd..:)

Don't you marinate the gourds ? If you marinate these they will loose their bitterness . I have never cooked these directly , ok let me give it a try .

It is one of my favorites and I can never understand why it isn't as popular as should be. Love your version...peanuts seem to be a nice crunchy addition to bitter gourd
