Potato pancakes aka Raggmunk is one of the most favourite meal of Swedish people and this dish is a must for them, obviously Swedish peoples love this pancakes. Raggmunk is a common dish and Ragg means crispy and munk means donut pan in Swedish.Usually eaten with fried salted pork and Lingonberries, this dish makes a complete meal. Thinly grated potatoes when mixed with egg, flour and spiced with pepper powder and salt, once fried in pan with butter makes this incredible pancakes. Swedish cuisine have varieties of potato based pancakes. Even Raraka is a variety of potato pancake which is known as lacy potato cake as this dish is made just with grated potato and egg without any batter preparation.
You can prepare this dish in a jiffy as this Swedish pancakes calls for easy preparing process and cooking method. You can also prepare the batter in advance but dont add the grated potatoes. Just add the grated potatoes before start frying the raggmunk. Also dont spread the batter to thick as we want this pancakes crisp and buttery edges. 4nos Potatoes (grated thinly)
1/4cup Flour
Salt
Black pepper powder
1 Egg (beaten)
1/2cup Milk
Butter (for frying)
Take the flour, beaten egg, milk, salt and pepper powder in a bowl.
Whisk everything well without any lumps.
Now add the grated potatoes, mix well, (no need of squeezing the grated potatoes).
Heat a pan with butter, spoon enough batter and fry in both sides until this pancakes turns golden brown and crispy.
Repeat the same process in small batches until the batter gets finished.
Serve with your favourite sauce.

Sweet potatoes are so healthy and this is an interesting recipe to dish out.
Hey that's a good one..for non egg eaters can we skip the beaten egg part and proceed or is there a substitute for it !
