My today's post is an easy breezy pudding which is a vegan friendly dessert and adding raspberry makes this pudding more interesting. Sago pearls are made from the inner pith of sago palm tree. The inner pith of the trunk is scraped out, pounded into fine particles, then soaked in water, which dissolves the starch from the fiber. This starchy water is strained through a sieve and dried. The starch that remains after the water evaporates is shaped into pearls. These sago pearls are very much used in Indian cooking to cook many delicious desserts and savory dishes as well.
Am running this week's blogging marathon with Are you pudding me? as theme, after a sinful chocolate pudding, my today's post goes to this vegan pudding. Simple to make, whoever loves to cook a simple dessert will definitely love to make this pudding often. Nothing much is need, with easy ingredients and easy cooking method, your vegan sago pudding gets ready in less time than you can imagine. I have added fresh raspberries in the pudding to bring a mild sourness, if you want to prepare this pudding with any sort of the fruits, do go with your favourite fruits.
1/2cup Sago pearls
2cups Coconut milk
1/2cup Sugar
1/2cup Fresh raspberries
Soak the sago pearls in water for an hour.
Drain the sago pearls, meanwhile bring boil the coconut milk, sugar, add now the soaked sago pearls and cook everything in simmer.
Once the sago pearls gets cooked, put off the fire.
Let it cool completely and add in fresh raspberries.
Mix well, arrange in fridge for atleast an hour and serve chilled.
