Coconut burfi, this is my all time favourite sweets and nothing can beat the taste of this simple sweets. Whenever my sweet tooth crave for some sweets, i dont hesitate a second to dish this incredible burfi. If you check my blog, you may notice that i have already tried couple of versions of Coconut burfis. My love for this sweets pulled me to dish out some impossible versions of coconut burfis and my today's post is one among those unimaginable version. Actually my today's recipe is completely vegan and gluten free. Trust me this incredible sweet will definitely please anyone's tastebuds as this sweet is completely quick and easy to dish out.
Usually fresh grated coconut is used for making this burfis, though dessicated coconut flakes can be used very well. However if you want to prepare this ultimate burfis with freshly grated coconut, dont forget to dry roast your freshly grated coconuts to bring some beautiful flavor to this burfis. Am running this week's blogging marathon with 'Vegan Sweets' as theme. Obviously these burfis goes for this theme, adding grounded cashew powder gives a super nutty texture to this simple sweet and its one of the best way to sneak cashews if anyone at home hates cashew in their diet.
1/2cup Freshly grated coconut
1/4cup Cashew powder
1cup Sugar
1tsp Cardamom powder
Dry roast the coconut until a nice aroma comes out.Transfer the roasted rava to a plate and let it cool.
In the same pan, take sugar cover it with enough water and bring it to boil,cook until it reaches one string constitency.
Add immediately the roasted coconut,cashew powder,cardamom powder and cook in simmer until the mixture gets off the vessel.
Pour the burfi to a greased plate and let it cool completely.
Slice the burfi as you desire and enjoy.

That's a great way to prepare the Burfi , I too make a couple of burfis in similar way .
I like the idea of roasting the coconut , it must have lent an excellent flavour .

Adding cashew to coconut burfi would make it more delicious. What an innovative idea. Looks like a cross between burfi and kaju kathli..
The addition of ground cashew must have enhanced the flavor of the coconut burfi.

I've always made burfi with fresh coconut. Toasting the coconut must have added a great depth of flavor to the sweet.
