Quinoa, this incredible tiny grains are our family favourite. Cooked either as salad, any South Indian dishes, sweets or else simply cooked as much as rice to serve along with a stew, quinoa makes an excellent meal. Quinoa is definitely a versatile grain, you can cook anything with. I have been cooking for a while with this gluten free grains, and these grains are seriously easy to cook with. Even my kids love this grains, needless to say Quinoa is becoming our most favourite grain after oats and rice.
My today's post is definitely a super filling quinoa soup which i dished out few days back for our dinner. Yes the weather here in Paris pulling me to dish out soups almost everyday for our dinner. Am running this week of blogging marathon with Kid's delight-Soups and stews as theme. And this quinoa soup is my kids favourite, obviously i couldnt stop myself to post this soup to under this theme. Not to forget that this vegetables loaded kidney beans soup is definitely a satisfying meal for anyone.
2cups Mixed vegetables
1/2cup Cooked kidney beans
1/2cup Quinoa
3cups Vegetable stock
2cups Water
1/2tsp Paprika powder
1/4tsp Pepper powder
1/2tsp Cumin powder
1/4tsp Dried oregano
Salt
Oil
Heat enough oil in a heavy bottomed pan, add the mixed vegetables to the pan and saute until the vegetables turns soft.
Add the kidney beans, washed and drained quinoa and cook for a while.
Add the vegetable stock, water with paprika powder, pepper powder, cumin powder and salt to the pan.
Bring everything to boil, put the flame in simmer and cook until the quinoa gets well cooked.
Put off the stove and add dried oregano to the soup.
Serve warm.
