Rye flour is my recent favourite now, i have been baking many fantastic baked goodies out of this flour recently. Actually i grabbed a 2kg packet rye flour from Organic store as they were in special offer. I baked a loaf with rye bread few days back,obviously i want to bake some muffins or cookies with this incredible flour and finally i did. Since i want to bake a super duper healthy muffins, i didnt hesitate a second to add some chia seeds to this rye muffins. Whenever i cook or bake with a new ingredient i dont forget to add my kid's favourite ingredient along with. If its comes to baking, i dont forget to add chocolate, hence this muffins are loaded with chocolate chips.
Am running this week's blogging marathon with Kid's delight - Travel food as theme, as i told earlier muffins are just prefect to carry if you are travelling or planning a trip. Easy to bake, pack and carry, this rye muffins stays absolutely prefect for more than a week if they are conserved properly. If you dont have chia seeds, you can replace them with flax seeds or black poppy seeds. Bake these healthy muffins and enjoy the goodness of both chia seeds and rye flour.
1cup Rye flour
1/2cup Rice flour
1/2cup Sugar
2tsp Baking powder
1tsp Vanilla extract
1/2cup Oil
2tbsp Chia Seeds
1/2cup Chocolate chips
1Large egg
1cup Milk
Line muffin paper mouls on a baking tray.
Take the rye flour, rice flour, baking powder in a bowl, sieve twice and add the chocolate chips, chia seeds, mix and keep aside.
Meanwhile in a bowl, whisk the oil, sugar,egg, milk, vanilla extract.
Now add the wet ingredients to the dry ingredients, whisk. Dont overmix the batter.
Spoon the batter evenly to the already prepared pan.
Bake for 20-25 minutes until a skewer inserted comes out clean.
Carefully remove the muffins from the tray, cool completely.
Enjoy with your favourite drink.

Who can beat you in your innovative baking skills ! Seriously you are very innovative . I haven’t used rye flour but I bet the chocolate is the best ingredient to cover up any new flavours .

ReplyDeleteI guess rye flour is gluten free, isn't it? If yes, then this seems to be the most decadent gluten free muffins I have seen! Chocolate makes everything and anything better, and I love the crunch chia gives in bakes... all in all, a delicious looking muffin that I would happily have with my cup of coffee...
