I have tried couple of dishes with puffed lotus seeds aka Makhana, this puffed seeds are seriously interesting to cook. You can make some quick snacks out of them just by pan roasting them with some spices. My today's post is completely a different version of puffed lotus seeds. Sweet version of puffed lotus seeds are great to carry wherever you go, yes they are seriously prefect to pack for travel. If i plan a trip, i dont carry oily foods with us, i do pack quick snacks like oven roasted almonds, cashews or else quick and oil free rice flakes mixture/chivdas or else baked goodies.
Am running this week's blogging marathon with Kid's delight - Travel Foods as theme, after a chocolate loaded muffins, i couldnt stop myself dishing out a simple lotus seeds sweetened simply with sugar flavored with vanilla essence. Trust me, this sweet makhanas are dangerously addictive and definitely a guiltfree snacks or travel food to go with.
3cups Puffed lotus seeds/Makhana
1/2cup Sugar
1tsp Vanilla extract
Take sugar in a vessel, add quarter cup of water and bring boil and cook until the syrup turns as double string consistency.
Add the vanilla extract and mix.
Put off the stove and add the puffed lotus seeds to the sugar syrup.
Toss the puffed lotus seeds well with the sugar syrup.
And let it cool completely.
Conserve the sugar coated puffed lotus seeds in an air tightened box.
Pack in ziploc bag if you are planning to carry for a trip.

Excellent twist to the makhanas ! Never tried a sweet version , must be tasting awesome ! Will try these today itself , I am sure they will be relished by all .

they indeed look like the perfect travel food for kids. so much better than popcorn. I have always made them in savoury flavour - I am tempted to try the sweet version.
