Pudhina pulao is quite an aromatic one pot meal to dish out with less efforts if you opt for a pressure cooker. Indian pressure cookers are real blessings if you want to dish out one pot meals easily and quickly. Today am posting a delicious, flavoursome rich and definitely an aromatic rice dish prepared with a spiced mint leaves paste along with already boiled and pan fried eggs. An easy pulao to dish out especially for weekend lunch or weeknight dinner. Served along with a simple raita or a delicious gourmet gravy, trust me this minty egg pulao will definitely please anyone's tastebuds easily. Since i cooked this pulao in pressure cooker, you can dish out this flavourful pulao in an ease even if you have sudden guests at home.

Easy to make, you can prepare this pulao easily with less efforts. A prefect meal to pack in anyone's lunch box as well, not to forget that this pulao is a real feast for Eggetarians. If you are a vegetarian, dont forget to replace the boiled eggs with either pan fried paneer cubes, boiled chickpeas or else simply with a bowl of mixed vegetables.
2cups Basmati Rice
5nos Boiled eggs
1no Onion (chopped lengthwise)
1no Green chilly (slit opened)
1tsp Cumin seeds
10nos Cashew nuts
1cup Yogurt
Oil
Salt
1tbsp Ghee
To Grind:
1cup Mint leaves (chopped)
8nos Pepper corns
1tbsp Fennel seeds
2nos Cloves
1/2inch Cinnamom Stick
1/4cup Grated Coconut
2nos Dry red chillies
Grind everything from the list 'To Grind' as fine paste by adding enough water and keep aside.
Heat enough oil in a pressure cooker, fry the boiled eggs until they until turns golden brown. Remove the fried eggs and keep aside.
Now add enough oil to the pressure cooker, add the cumin seeds and cashew nuts until they turns golden brown.
add the chopped onions,salt and saute for few minutes, add the grounded paste, yogurt with slit opened green chillies and cook for few minutes.
Add the rice to the mint paste, toss for a while.
Now add 3 cups of water,mix well and bring it to boil. Add the fried eggs to the rice.
Cover the pressure cooker with a lid and cook for three whistles.
Once the pressure gets released, add the ghee and, toss gently.
Serve hot with raita or spicy side dish.

The mint along with the spices will definitely make it flavorful. I shall try this with paneer or chickpeas as you suggested.
