Have you ever tried dishing out tikkis/patties with Scrambled eggs aka egg bhurji. I have tried my hands in dishing out some tikkis with scrambled eggs. Trust me, this tikkis came out extremely delicious and we enjoyed thoroughly having these incredible cutlets with some spicy chutney for our evening snacks. You might have noticed that am posting three different dishes with an ingredient, yes my theme for this week's blogging marathon is One ingredient in three ways, obviously after making a lipsmacking Egg white cubes kurma, i couldnt stop myself dishing out this easy yet a delicious evening snacks for this theme. You can prepare these tikkis before a day even for a get together or a party as these patties stays prefect in fridge for a day.
Usually egg cutlets are prepared with halved boiled eggs stuffed inside a spiced potato mixture to make patties with. But my version is completely different, just prepare your scrambled eggs and make your patties with cooked and mashed potato mixture spiced with usual spice powders. I have pan fried these patties, dont forget to deep fry them if you want them more crispy. However shallow frying also works awesome as well. Give a try to this incredible tikkis, am sure you guys will enjoy thoroughly.
Egg Bhurji:
4nos Eggs (beaten)
1no Onion (big & chopped finely
1/2cup Bellpepper (green and red)
1tsp Cumin seeds
1tsp Ginger garlic paste
1/4tsp Turmeric powder
1/2tsp Red chilly powder
2nos Green chillies (chopped)
1/2tsp Garam masala
Salt
Chopped coriander leaves
Oil
Heat enough oil,lets crack the cumin seeds, add immediately the chopped onions, ginger garlic paste, saute until the onions turns transculent.
Now add the chopped green chillies, chopped bellpeppers,give a quick stir and add the turmeric powder, chilly powder, garam masala powder with salt, saute everything for few seconds.
Finally add the beaten eggs,put the flame in simmer,cook everything for few minutes (keep stirring continously)..
Keep aside.

3nos Potato (cooked & smashed)
1tsp Red chilly powder
1/2tsp Garam masala powder
Salt
1/2tsp Fennel seed powder
3tbsp All purpose flour
Bread crumbs (as per need)
Oil
Take the potatoes, prepared scrambled eggs in a bowl, add the red chilly powder, fennel seed powder, garam masala powder and salt.
Mix everything well and make medium sized patties out of this mixture.
Mix the all purpose flour with enough water to make a paste.
Dip the patties in the flour paste and roll them gently in the bread crumbs.
Once finished, arrange them in fridge for an hour.
Heat oil for pan fry, drop the cutlets and cook on both sides until they turns golden brown.
Serve with favourite sauce.
Egg Burji Patties! I love it. I will take it as meal. It will so filling.
