Kurma is an aromatic flavourful curry which can be prepared with meats or vegetables or else with both meats and vegetables.Kurma is definitely a gourmet gravy as this curry is prepared with couple of spices and coconut cream. Kurma is our favourite curry as this dish can be served along with any sort of flavoured rice or simply with cooked basmati rice or else with rotis or naans. Obviously Kurma is a fabulous gravy to serve with any sort of the dish. I have already dished out couple of varieties of kurma but still some variety of kurmas are yet to cook and post in my space. One among those kurmas is this Egg white cubes kurma with couple of vegetables. Usually whole boiled eggs are used in kurma hence this kurma is definitely a different dish from the usual egg kurma.
This blog was in hibernation for a while, and am kick starting this week of blogging marathon with One ingredient 3 ways as theme. And i picked Egg as my main ingredient. Egg is a good source of protein and egg is a must for us. My fridge will always have eggs hence i do varieties of foods with this protein rich eggs. Coming to this Egg white cubes kurma, this dish calls for bit time consuming preparations, this kurma is definitely a must to try if you want to cook with eggs in a different way. We enjoyed this kurma for our sunday lunch with a simple Jeera pulao, both together works awesome and we had a fabulous lunch with. I love to cook kurma with vegetables like drumsticks, jackfruit seeds, potatoes etc, obviously i couldnt think more than adding those vegetables in this gravy. A flavourful curry to make without any fail.
For Egg White Cubes:
5nos Egg whites
1/4tsp Turmeric powder
Beat the egg white with a pinch of turmeric powder, transfer it to a grease vessel or bowl.
Steam cook it for 3-4minutes.
Take the steamed egg whites from the cooker and let it cool completely.
Cut them as cubes and keep aside.
Kurma:
2nos Onions (chopped)
2nos Tomatoes (chopped)
2cups Mixed vegetables (i used drumsticks, jackfruit seeds & potatoes)
1tbsp Ginger garlic paste
1tbsp Coriander powder
1/2tsp Red chilly powder
2nos Green chillies (slit opened)
1/4tsp Turmeric powder
2nos Whole spices (bay leaves,cloves,cinnamon stick,cardamom)
1tsp Fennel seeds
1/4cup Mint leaves (chopped)
Oil
To grind:
2tbsp Poppy seeds(soaked in hot water)
4tbsp Grated coconut
5nos Cashew nuts
Grind poppy seeds,grated coconut and cashew nuts as fine paste and keep aside.
Heat enough oil in a pressure cooker, fry the bay leaves,cloves,cinnamon sticks,cardamom seeds, fennel seeds until they turns brown.
Add the chopped onions,chopped tomatoes,ginger garlic paste and slit opened green chillies,cook everything until the raw smell goes away.
Add the vegetables and cook for a while.
Now add the coriander powder,red chilly powder,salt and cook for few minutes.
Add enough water and cook for few seconds,once the gravy starts boiling add the grounded paste,cook for few minutes.
Add enough water and bring it to boil, cook until the oil gets separates.
Finally add the egg white cubes and put off the stove.
Add the chopped mint leaves and give a stir.
Serve hot with rice or rotis.
