Most known, healthy and quite filling steamed breakfast dish in South India is Idli. Idli is prepared prominently with rice, urad dal and fenugreek seeds. Instant versions of this Idlies do exists, and this instant versions of idlis are seriously very easy to make. If you dont have idli batter, you can still stick with varieties of Instant versions of Idlies. Coming to this steamed dish, semolina aka rava is usually used in dishing out Instant versions of Idlies. However any sort of semolina can be used and here comes an another version of instant idli which i dished out with Sorghum semolina aka Jowar rava.You may wonder how this idly will be in taste and texture, i didnt find my difference between the usual instant rava idlies we do quite often.
You can mix and match the varieties of semolina depending upon your tastebuds. Coming to this Jowar rava idli, you just need to soak the jowar rava bit earlier so that it will be easy to work with. Sorghum rava might be bit chewy when compared to the usual semolina, hence soaking makes them easy to prepare this instant idlies quickly. Usually we used to make rava idlis without grinding them, if your kids or family doesnt like the crumbly texture of this idlis, dont forget to grind them as fine powder and make this idlies so that we can easily feed them.We had a super satisfying dinner with this healthy steamed beauties with spicy garlic chutney.
3/4cup Sorghum Semolina/Jowar Rava
1/4cup Rolled oats
1cup Sour yogurt
1/2tsp Mustard seeds
1/2tsp Urad dal
1/4tsp Cumin seeds
1no Green chilly (chopped)
1/2tsp Eno Salt or Baking soda
Few curry leaves
Oil
Salt
Heat few drops of oil, let splutters the mustard seeds,cumin seeds,urad dal.
Add immediately the chopped green chillies,curry leaves, fry for few minutes.
Meanwhile soak the jowar rave in a cup of water for half an hour.
Now take the soaked jowar rava,rolled oats in a bowl.
Add the sour yogurt, tempered spices to them and finally add the eno salt.
Stir quickly and pour enough batter to the greased idli plates.
Steam cook in idly cooker for 15-20minutes..
Serve with spicy chutney.

Lovely color and these are my kind of idlis, instant versions as I rarely make idli batter at home.
