Looking for a simple dal curry to serve with rice of rotis, then you have to check my today's recipe. Its definitely a simple, flavoursome rich and wonderful side dish or curry to have with anything for your dinner or for lunch. My today's recipe calls for both Butternut squash and drumstick leaves, and this is quite a unique combination to work with. Since i had some leftover butternut squash chunks after preparing a soup with, i couldnt stop myself to dish out this dal curry. This dish is simple, easy to make, definitely a flavourful rich side dish or curry to have with both rice and rotis. Butternut squash gives some mild sweetness but with our Indian spices, this dal curry came out extremely delicious.
As i told earlier this dal curry is very simple to dish out. Pressure cooker is much needed to make this ultimate dish. Pressure cooker is a real blessing if you dont have enough time to cook up your meal after a hectic day. Trust me, i cant survive without Pressure cookers and they have their own place in my kitchen. And this dal curry is completely cooked in pressure cooker but flavoured with a simple coconut and cumin paste. Am running this week's blogging marathon with Easy dinner dishes as theme. Obviously this dal curry is going to this week's theme as this dish calls for simple and easy cooking process.
2cups Butternut squash (cubed)
1/2cup Drumstick leaves
1/2cup Moongdal
1no Onion (chopped)
1no Tomato (chopped)
3 Green chillies (slit opened)
1tsp Mustard seeds+cumin seeds
Few curry leaves
1/4tsp Turmeric powder
1/4tsp Asafoetida powder
Salt
Oil
To grind:
1tsp Cumin seeds
3tbsp Grated coconut
Grind the cumin seeds and grated coconut as smooth paste with enough water and keep aside.
Meanwhile take the moongdal,asafoetida powder, turmeric powder, chopped onion, chopped tomatoes, slit opened green chillies, cubed butternut squash, drumstick leaves together in a pressure cooker with enough water, cook upto 3hisses.
Add now the already prepared grounded paste to the cooked dal and vegetable mixture.
Cook for few minutes, mash the vegetables a bit.
Heat enough oil in a kadai, let splutters the mustard seeds, cumin seeds, add this tempered spices to the dal.
Put in simmer and cook for a while, put off the stove.
Serve with rice, idlis or dosas.

I have never tried using drumstick leaves , but heard a lot about them . Butternut squash , daal and leaves , all three would make it so healthy and the curry looks really good .

This dal looks tasty and will be a comfort food for me. I have never tried making this way, must give a try.

ReplyDeleteI make a similar dal with chowchow or pumpkin And even skip the coconut paste. I still tastes delicious! Of course it’s a quick and easy dish and perfect for dinner as well

ReplyDeleteYou come up with some unusual combinations and dishes and usually it is a treat to watch you giving twists to the traditional Indian dishes. The dal looks creamy and delicious and together with the vegetable dishes, the whole thali looks inviting.
ReplyDeleteLove using murungaillai along with the squash. That is a good choice of vegetables and pressure cooker is so much needed for our cooking.
ReplyDeleteThe whole platter looks delicious, love the idea of adding drumsticks to dal. We add palak and methi in dal.. never used drumstick leaves.. Looks delicious.
