Tabbouleh is a must for us while the weather is too hot outside, obviously picnic is much needed once the Sun god shows his face. We wait eagerly for hot weather here after hibernating for almost 6 months under the nasty chilled,snowy climate. You must visit Paris when the weather is hot, you can see easily each and every public gardens will be filled with peoples either taking sun baths or else with their picnic baskets. We love to pack foods for picnic almost every weekend during summer. Obviously Tabbouleh have its important place in our picnic basket as this chilled salad please everyone's tastebuds easily. Tabbouleh is very easy to prepare with simple ingredients. Spiced with pepper powder, salt and olive oil, this tabbouleh is definitely a prefect summer salad to enjoy without any fuss.
Tabbouleh is a complete meal if prepared with a combination of different vegetables. Am kick starting a new month of blogging marathon with Picnic Hamper as theme. Needless to say, the first dish came to mind is this Mixed vegetables Couscos Tabbouleh. With some pan sauteed zucchini, green and red bellpepper, sweet corn kernels and chopped tomatoes, this couscous tabbouleh is very much easy to dish out with less efforts. Served chilled, this tabbouleh tastes absolutely fabulous and satisfy easily some hungry tummies.
3cups Couscous (cooked as per package instructions)
1cup Zucchini (sliced )
1cup Green bellpepper (chopped)
1cup Red bellpepper (chopped)
1/2cup Tomatoes (chopped)
1cup Sweet corn kernels
1/4cup Chopped mint leaves
3tbsp Olive oil
2tbsp Lemon juice
Salt
Pepper powder
Saute the chopped green bellpepper,chopped zucchini, chopped bellpepper, in a pan with few drops of olive oil. Dont saute for a long.
The vegetables should be bit crunchy.
In a large bowl, take the cooked couscous, sauteed vegetables,chopped tomatoes,sweet corn kernels and toss everything gently.
Add the chopped mint leaves and toss again gently with olive oil, lemon juice,salt and pepper powder.
Arrange in fridge atleast for half an hour.
Serve and enjoy with your favourite meats or grilled vegetables.
