Carrot Sweet Potato Soup

A bowl of warm soup is quite enough for me when the weather outside is too chilled or nasty. Obviously i do varieties of soup, one of my recent favourite is this gorgeous looking bright and delicious carrot,sweet potato soup. Sweet potatoes are in peek season here and i couldnt stop myself to buy them from the nearby farmer's market. After making a couple of dishes with them i finally finished them by adding some sweet potato chunks in my usual carrot soup. This soup turned out silky,filling,satisfying,mildly sweet and definitely a healthy soup to enjoy with some sides for a dinner.

This week am running the famous blogging marathon for three days, the theme of this week's blogging marathon is Soups or Salads with sides. I served this delicious soup with Fusion Quesadillas for our lunch few days back. Both this soup and quesadillas were very much filling and everyone at home enjoyed these both dishes thoroughly.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#38 . 


2nos Carrots (chopped)
1no Sweet potato (medium sized,peeled & cubed)
1tsp Ginger (grated)
1no Onion (chopped)
Salt
Pepper powder
Olive oil
1tsp Dry herbs

Heat the olive oil in a pressure cooker, add the chopped onions, saute until they turns transculent.

Add the grated ginger, chopped carrots,cubed sweet potato and saute everything for few minutes.

Add enough water, salt and pepper powder.

Cover the cooker with lid and cook until 3 whistles.

Once the steam gets released, with a hand blender blend the soup as bit coarse texture.

Serve warm topped with a generous pinch of dried herbs.
