Pineapple Basundi/Single Serve Exotic Basundi

Basundi, this word itself makes me drool, i just love milk based sweets very much. Yes my sweet tooth craves always for some milk sweets. Though we have few Indian sweet shops in Paris, i love to prepare myself those easily available sweets at home. However i love to experiment in my kitchen rather than grabbing some from shops. Coming to my today's single serve desserts, yes my theme for this week's blogging marathon is single serve desserts, i opted for a fruit loaded basundi. Basundi is prepared by reducing milk to half of the quantity.Its quite a fantabulous sweet, one can enjoy this dessert along with some deep fried pooris, actually basundi makes an excellent pair with pooris. However people enjoy basundi chilled as much as like rabdi, an another milk dessert prepared almost like basundi.

Single Serve Eggless Mango Mousse

Its summer here and mangoes shows their head in our farmer's markets. However i grabbed two boxes of succulent sweet mangoes from Indian stores. Back home, after relishing with our meal, i kept few mangoes aside to dish out some delectable desserts with. And one among those desserts is this fantastic, eggless and agar agar/gelatin free mango mousse. Actually i prepared this dessert for our Sunday lunch as i had my cousin family for lunch. Since it was a sudden visit, i couldnt bake or make a chocolatey dessert for him. Hence i opted to dish out this simple, yet a delicious dessert to relish after our heavy Sunday meal. Just with three ingredients, you can finish this mousse in a jiffy. Yep just three ingredients, whipping cream, sweetened condensed milk and mango puree is enough to prepare this mousse.

Very quick to prepare, my today's post is definitely a must to try if you want to have quick and easy dish for your breakfast. Instant dosas are seriously a life saver, just prepare the dosa batter by combining the ingredients, then let them sit for few minutes before making dosas out of them. You can finish your breakfast or dinner without any fuss with these instant dosas. I used wholewheat bread slices to prepare this dosa, semolina plays an important role to dish out these ultimate dosas.

Instant Red Rice Flakes Vadas/Instant Poha Onion Vadas

If you want something crispy, an excellent munchies for your cup of tea or coffee for your evening snacks, you should check my today's instant vadas loaded with onions. Very simple to make, these vadas are completely instant and no grinding is needed. Apart from chopping onions and green chillies, these crispy poha aka rice flakes vadas are very quick to prepare. Usually vadas are prepared by soaking dals for more than two hours and grinding them as bit coarse paste or smooth paste depending the dals. These poha vadas are prepared by just soaking thin rice flakes for just few minutes. Once they are soaked , drain them and mash them nicely with your fingers to make as a thick paste, add the chopped onions, chopped green chillies and spices to the paste, shape them as vadas and fry them. This week's posts are going to be some Instant dishes, yes instantly easily prepared dishes are seriously life saver. I love instant dishes hence i do prepare them often. Earlier i was very much skeptical about Instant idlies or dosas, pickles etc. But my busy personal life pulls me to dish out instant dishes atleast twice a week as they are seriously very easy to dish out. Am running this week's blogging marathon with Instant dishes as theme.Instant foods are defined as foods that can provide quickly by reducing minimum time of preparation or cooking. Most of the instant dishes can be prepared less than 5 minutes depending upon their preparation and cooking time.

Black Chickpeas & Cheese Salad

My family members are great fan of cheese especially in salads. If i want to feed them easily with salads, i dont forget to some cheese cubes, so that they can enjoy both their bowl of salad along with cheese. When i picked Kid's delight Summer salads as theme for this week's blogging marathon i was very much sure about making a salad with cheese. Since i had some cooked black chickpeas in my fridge i couldnt stop myself to adding them while making this easy breezy summer salad for our dinner. Yes its summer here,obviously i dont think more than preparing some easy and healthy salads for our dinner just to avoid cooking after some hectic busy schedules.One among those summer salads is this cheese loaded chickpeas salad with couple of vegetables in it.

Red Cabbage Coleslaw/Purple Cabbage Coleslaw

We are officially entered to Summer season since two days back, obviously i have been preparing some summer salads for our evening dinner as they are easy to dish out. I love to prepare my own dose of coleslaw at home. Coleslaw is a salad prepared mainly with finely shredded raw cabbage, which is usually served with a vinaigrette or mayonnaise dressing. Coleslaw is definitely a prefect summer salad as they are really very easy to dish out. This salad can be prepared earlier as they are easy to conserve and serve chilled for a meal. It can be served very well as side dish with grilled meats or fried meats or else they can be served along with French fries.Colselaw can be used in filling for making some sandwiches as well.

Fry Sauce/French Fry Sauce

My last but not least sauce for this week's blogging marathon is this super easy Fry sauce. Am running this week's blogging marathon with Condiments on side as theme. If you are looking for a sweet and sour sauce, you should take a look at my today's post. My love for Chinese cuisine pulled me to dish out this easy breezy garlic and ginger loaded sauce. This honey garlic sauce is one the easiest sauce can be prepared with less ingredient in an ease. Usually this sauce is used to dish out some stir fries, however i served this sauce as side for some pan fried tofu slices. Purple Cabbage Ginger Chutney/Muttaikose Inji Thuvaiyal/Cabbage Thogayal

South Indians makes excellent side dish for their breakfast dishes especially for Idlis or dosas. Sometimes we need to think seriously out of the box to please everyone at home. My hubby love to have his idlis or dosas with different sort of chutneys than finishing his meal just with a side dish. Obviously if i plan idlis or dosas, i have to plan atleast more than a chutney to please his tastebuds. Hence i couldnt stop myself to dish out this purple cabbage thuvaiyal aka chutney to serve with dosas. Purple cabbage/Red cabbage you can name them as whatever, but this cabbage is bit expensive than the green cabbage but trust me they stay fresh for a long than the green one. Vegan Onion & Green Capsicum Chutney/Onion Bellpepper Chutney

If you are a South Indian, you might know very well that our favourite South Indian breakfast aka dosas or idlies calls for varieties of side dishes. Obviously we cant stick always with some usual side dish to serve those breakfast dishes. My family loves different side dishes or chutneys if i serve our own South Indian breakfast dishes. Seriously i always look for a new variety of  chutney to give a try. And i never forget to mix and match the ingredients according to our tastebuds. One of my recent trial to serve along with dosas is my today's onion and green bellpepper chutney. Sauteed green bellpepper and onions spiced with red chillies and few more spices makes this incredible chutney.

Vegan Onion Rasam/Spiced Onion Rasam/Neerulli Saaru

Rasam is a medicinal Indian soup which is prepared everyday to please our tastebuds as well as to helps for easy digestion. This dish is quite a usual one at home. A kind of comforting food for me. Am running this week's blogging marathon with One vegetable different ways as theme. Once i picked Onions as the vegetable for this week's theme, i couldnt resist to prepare a rasam with. This rasam is definitely a fingerlicking dish which is quite a comforting food as well. Rasam, this dish is usually made with a grounded spiced rasam powder which calls for a combination of spices. But this onion rasam is seriously different from the usual rasam. Onion rasam calls for white onions which is quite not a usual one for making rasam. Mostly shallots are used for dishing out this incredible dish, but for a change i tried this dish with white onions.

Onion Paratha/Pyaz ka Paratha/Onion Roti

Am running this week's blogging marathon with  One vegetable different ways as theme, since i dont want to run behind any other vegetables, i went on dishing out three different dishes with my favourit Onions. Yes i picked Onion as my vegetable of this week. Onions is a must in my cooking, if i dont have enough onions at home i feel like missing something in my cooking. Yes i cant survive without onions and tomatoes. Just with these two vegetables, i can cook many different dishes with an ease. Hence i couldnt think more than picking onions as my prominent vegetable for this week's theme. Onions are extremely flavourful, whether raw or cooked, onions are super healthy.Raw onions have higher levels of organic sulfur compounds while the boiled ones are good source of fiber and copper. It was found that people with highest consumption of onions have lowest cancer rates, they also helps to lower blood sugar level. Onions have numerous nutritional and health benefits.

One pot meal are always our family favourite, i always look for Sunday to dish out varieties of one pot meal. And my mom is an expert of one pot meals, she do cook those dishes with different variations in an ease. My today's post is also one of her dish which i never fail to prepare whenever i ran out of meats. Sunday lunch is always special at home and kids look for meaty dishes for their lunch. Once in a while, i cant think more than dishing out a simple one pot meal like today's post. Mint and coconut pulao is definitely an easy breezy dish to prepare with less efforts. Eggless Confetti Microwave Cake

Microwave cakes are seriously a blessing and terribly easy to dish out if you have sudden cravings. Though its simple to prepare anything through microwave oven, trust me am reducing the usage of microwave nowadays. Last weekend, my daughter asked me to make some simple cake for her brunch. She came back to home after her Morocco trip, obviously i cant refuse her request. Instead of preheating oven, i opted for a simple, quick, delicious and definitely an easy cake with some coloured sugar sprinkles. This cake takes hardly less than 3 minutes to get ready. Yes cooking time may varies depending upon on your microwave power. Mine took 1 minute to get ready. Butterbeans kurma makes an extremely delicious side dish to enjoy with some rotis, idlies, dosas or else simply with mildly spiced pulaos. My love for butterbeans always pull me to cook some fingerlicking dishes with this ultimate beans. Cooked with anything, this beans makes extremely delicious dishes. Though i have already cooked many dishes with this beans, this tomato loaded butter beans kurma will definitely please some hungry tummies easily when served along with your favourite dishes like rotis, rice etc. This tomato kurma with butter beans is one of my mom's signature dish. My dad loves butterbeans in anything, obviously my mom do this kurma often to please him.And i learned this fingerlicking aromatic kurma dish from her. Red Rice Dal Dumplings/Sivappu Arisi Paruppu Paniyaram

Since am busy with my work, its really a hard task for me to prepare idly batter for every week. Hence i stick with easy adai batter or else with instant dosa batter to whip up some dosa quickly for our dinner. Since the last weekend was a long weeked for me, i gathered all the ingredients to grind some dosa batter for a week. Obviously i couldnt stop myself to grind some red rice-mixed dals batter to make some dumplings.This dumpling batter goes for an easy preparation and no fermentation is needed. Just leave the batter in room temperature for an hour and make your dumplings with your paniyaram pan. You can have them either for snacks, breakfast or else for dinner if you dont feel like making your dinner.

Baked Potato-Carrot Tater Tots

After a month of silence, am here with a new week of blogging marathon. And my theme for this week is Kid's delight - Bite sized foods. Obviously this week's posts are going to be kid's friendly bite sized foods. And my today's post is a simple, gluten free, guilt free, easy breezy baked Tater tots which is dished out simply with our favourite vegetable aka Potato. Since i dont want to prepare a usual tater tots, i couldnt stop myself adding some grated carrots to make them more healthy and catchy. Kandi Sunnundalu/Toor Dal Laddoos

Once again am sharing Hari Chandana's dish which i seriously want to give a try. Yes my today's post is Toordal Laddoos, i know many of you might wonder how laddoos can be prepared with toor dal. Even i was as much as like you guys. But after dishing out this laddoos my vision was completely a different one. If you love moongdal laddoos, then you will definitely enjoy this laddoos. The secret behind making a prefect aromatic laddoos is to dry roast the toor dals with much care and patience. Nicely dry roasted toor dal gives a fabulous flavor and i enjoyed it while roasting.

I want to showcase Ugadi festival as the festival of this month. Chia Seeds & Chocolate Chips Rye Muffins

Rye flour is my recent favourite now, i have been baking many fantastic baked goodies out of this flour recently. Actually i grabbed a 2kg packet rye flour from Organic store as they were in special offer. I baked a loaf with rye bread few days back,obviously i want to bake some muffins or cookies with this incredible flour and finally i did. Since i want to bake a super duper healthy muffins, i didnt hesitate a second to add some chia seeds to this rye muffins. Whenever i cook or bake with a new ingredient i dont forget to add my kid's favourite ingredient along with. If its comes to baking, i dont forget to add chocolate, hence this muffins are loaded with chocolate chips.

I have tried couple of dishes with puffed lotus seeds aka Makhana, this puffed seeds are seriously interesting to cook. You can make some quick snacks out of them just by pan roasting them with some spices. My today's post is completely a different version of puffed lotus seeds. Sweet version of puffed lotus seeds are great to carry wherever you go, yes they are seriously prefect to pack for travel. If i plan a trip, i dont carry oily foods with us, i do pack quick snacks like oven roasted almonds, cashews or else quick and oil free rice flakes mixture/chivdas or else baked goodies.

No Bake Oats Chocolate Cookies

One of the easiest cookies is my today's oats loaded chocolate cookies. With simple and pantry friendly ingredients, am sure this cookies will definitely become your most favourite cookies. Quick to make, dont forget to make these cookies as this cookies are completely 'No Bake'. These cookies calls for stove top cooking process. Usually peanut butter is used in most of the no bake cookies, but mine is completely a different one. I used butter and chocolate chunks to replace the peanut butter, and this works. As like always, i dry roasted rolled oats before preparing this cookies. If you are using quick cooking oats you can skip the dry roasting part.

Very simple to make, this chocolate milk suits prefect for anyone's breakfast or else for a mid morning brunch. Obviously my pantry will have different sorts of cereals, however whenever i do my weekly grocery, i dont forget to grab some packets of cereals as well. Cinnamon Hot Chocolate

Hot Chocolate is my younger one's most favourite drink. Flavored with any spices or with vanilla, he can just drink his mug of hot chocolate without any fuss. Obviously when i picked Kid's delight-chocolate as theme, i couldnt think more than preparing my kid's favourite hot chocolate but flavored with cinnamon. Varieties of Hot chocolates do exists, however drinking chocolate or cocoa is definitely a comforting food while the weather is super chilled or rainy outside. European style of hot chocolates tends to be highly rich and thick while in United States, hot chocolates are simple and easy to make thinner versions. Not to forget that hot chocolates always have distinctive additives or toppings.

My today's post is one of the easiest dessert you can dish out in few minutes with less efforts. Oreo, this ultimate chocolate delight makes some excellent desserts. My kids are ardent fans of desserts prepared exclusively with this oreo biscuits eventhough i buy this biscuits very rarely. Obviously whenever i pick these biscuits from stores, i dont forget to make some desserts with them. Kiwi & Vanilla Icecream Shake

Though climate is too chilled and snowing here, nothing stopped us to enjoy some icecream shake as dessert for our sunday's lunch. This time i prepared a simple, quick icecream shake with my favourite fruit 'Kiwi'. Kiwi, this incredible fruits have their own place in my fruits basket. Few years back, i had some allergic reaction whenever i had this fruit. After following a strict medication now i can able to have this fruit either by combining with other fruits in shakes, smoothies or else by cooking as fruit compote or baking them in cakes or muffins.

Garam Masala Popcorn

A cup of popcorn kernels were sitting in my pantry since a long, obviously when i picked 'just three ingredients' as theme for this week's blogging marathon, the first dish came to my mind is some spicy Indian flavored popcorns with those kernels. Grilled Cheesy Pizza Sandwich

If you are looking for an easy breezy sandwich to pack in your kid's lunch box or else for an evening snacks, you should check my today's cheesy pizza sandwich. Just with three ingredients, that too with easily available, pantry friendly ingredients you can dish out this cheesy sandwich. To dish out this droolworthy sandwiches, you just need some bread slices, store bought pizza sauce or homemade pizza sauce and grated cheese. How easy na, put evening together and grill the sandwich. If you dont have grilling iron or oven, just toast them in a tawa.

Jaggery Phirni

Phirni/Firni is a delectable creamy dessert which is completely gluten free. Its a super easy dessert which is a must in Northern part of India especially during festivals. Phirni is prepared with soaked and grounded rice, cooked in milk and sweetened with sugar. Its quite a fabulous delightful dessert to serve after a meal which makes a prefect sweet dessert to enjoy or else to enjoy with your near ones during a festival.

Lychee Pannacotta

Pannacotta is one of the light,creamy dessert to relish after a meal. Its an Italian dessert which calls for cream, gelatin. Sweetened cream thickened with gelatin and molded makes this luscious dessert 'Pannacotta'. Though gelatin is a must in this dessert, you can replace gelatin with agar-agar/chinagrass. Chinagrass is a vegetarian version of gelatin which is often used in many Asian cuisine. My today's dessert is a gluten free,stylish Italian dessert which is simply flavored with freshly squeezed lychee juice and lychee chunks in it.

Tawa Whole Wheat Aloo Kulchas/Tawa Potato Kulchas

Kulcha is a variation of Naan, its essentially a Punjabi dish. Though i have already posted few variaties of kulchas in both my spaces, i have still few more to post. Aloo kulcha is my kid's favourite, its quite a filling dish which doesnt need any side dish to relish with. Kulchas can be cooked in tandoor as well as through stove top in tawa. Am running this week's blogging marathon with Kid's delight- Cooking with tawa as theme, after posting two delicious tawa friendly dishes i couldnt stop myself to post my kid's favourite Potato kulchas.

Tawa Paneer Masala/Paneer Tawa Masala

I have rarely seen my kids saying 'no' to paneer, obviously my second post for this week's blogging marathon is an alluring, fingerlicking goodness Tawa paneer masala to serve along either with some pulao or else with rotis. As i told earlier, my kids just love paneer in any form. Obviously i opted to prepare paneer myself at home as they are quite expensive and very less in weight when compared to the homemade paneer. Whenever i feel like cooking with paneer, i prepare paneer at home, not to forget they are freezer friendly as well. Those frozen paneer cubes are very easy to cook with at anytime of the day, yes they are super handy.

Pizza is one of the most favourite dish for many kids, mine is not exceptionnal as well, my kids are ardent fan of pizza. My younger one can have pizza everyday without any guilt, yes he just love it. When i picked Kid's friendly- Cooking with tawa as theme for this week's blogging marathon, the first dish came to my mind is definitely pizza. Obviously i opted for an easy breezy pizza with bread slices. Bread pizza is one of the easiest dish to prepare if your kids refuses to eat anything other than pizza for their lunch or dinner.

Adamant Creeper Chutney/Pirandai Thogayal

Adamant creeper is known as Pirandai in Tamil, have many medicinal benefits and this creeper grows abundantly in India which doesnt need any special care. Obviously this plant can be grown easily in pots at home with less efforts. I have been looking for a chance to cook with this  adamant creeper,finally i cooked up few fantastic dishes with it. I have already posted a delicious Rasam with this creeper, and my today's post in an another popular chutney aka thogayal prepared with this super healthy Adamant creeper. An excellent thogayal to enjoy with hot steaming rice served along with spicy side dish, makes a satisfying meal.

Aloo bharta is a North Indian side dish to enjoy with rotis or else with parathas. And this mashed potato and peas dish works awesome as spread to prepare your rolls or as sandwiches. Thakkali Kara Chutney/Spicy Red Chutney

South Indians loves varieties of chutneys or side dishes to enjoy with their breakfast dishes. Even my husband needs more than two chutneys to enjoy his hot steaming idlies or crispy dosas. Obviously i have an obligation to prepare different chutneys to please my husband's tastebuds. Though i have prepared numerous time, am yet to post this easy breezy kara chutney prepared with pulpy tomatoes and loads of shallots.Kara chutney is a popular chutney of Chettinad cuisine, and this chutney calls for garlic cloves,red chillies and tamarind.

Toasted Muesli

Muesli, a prefect breakfast loaded with oats, nuts and fruits. I have been preparing myself my own muesli from the past few years as they are very easy to prepare at home with any sort of nuts, seeds or dried fruits of your choice. My today's post is one of our recent favourite as this toasted muesli goes for some crispy cornflakes, chocolate chips along with rolled nuts and loads of nuts,seeds.Since this toasted muesli have chocolate chips in it, kids will definitely enjoy this ultimate healthy muesli for their breakfast without any fuss.

Maple & Chia Seeds Whole Wheat Pancakes

Pancakes makes an excellent super filling breakfast especially when it comes to Weekend brunch or for lazy breakfast. However pancakes are seriously easy to whip up as they goes for an easy preparation as well as a simple cooking process. My younger one love pancakes for his breakfast especially during weekends. When i picked Kid's delight-Quick Breakfast, i thought of whipping some pancake batter to please my pancakes loving son's tastebuds. And this time, i prepared the batter simply with whole wheat flour, chia seeds, buttermilk simply sweetened with maple syrup.

Brown Bread & Nutella French Toast Rolls

I have rarely seen kids saying No to Nutella, this chocolate hazelnut spread have its own place in my pantry since a long. However this spread is not that much healthy, but its seriously very hard to keep them away from kids. Obviously i get this spread very much rarely from stores. French toast rolls are in my to do list for a while. Seriously i want to dish some rolls with nutella especially for this week's blogging marathon theme.
