Parath Parantha - 16 Layered Paratha

Parath Parantha - this paratha is quite famous in Delhi especially from Prathen Wali Gali in Chandni Chowk, Delhi. Parath means layers, hence this paratha is named as Parath Parantha. These parathas can be made in any size with different shapes, though i sticked with a square shaped one. The best part of this paratha is the spice mix used in making layers.This paratha have 16 layers, once rolled the dough, a spice mix with chilly powder, cumin powder, garam masala and chaat masala is spread over the rolled dough and cut it as 16 pieces. Once stacked, this paratha is rolled either as round or square shaped paratha.

I have couple of bookmarked dishes, seriously the list is just going on and on. Obviously i want to clear them as soon as possible as all those bookmarked recipes are sitting for a long.Thank god, finally i can make three dishes out of my list coz of this week's blogging marathon. Easy to make and delicious to relish along with phulkas or rotis. This creamy Malai baingan aka eggplants cooked in creamy tomato sauce goes for easy breezy preparation, no chopping is needed. Also this dish goes under no onion no garlic recipes. Sliced eggplants deepfried or shallow fried in oil are much needed to make this lipsmacking gravy. Actually i was searching for an interesting eggplant gravy few months back in google and i landed to Riya's Malai Baingan which i bookmarked immediately and tried it few days back for our evening dinner.

Beguni - Bengali Eggplant Fritters

Beguni aka Bengali eggplant fritters makes an excellent evening snacks, the traditional way of enjoying this beguni is to serve this fritters with puffed rice and green chillies.The dish may be prepared by coating eggplant with besan paste and then frying the pieces in oil.The eggplant is usually cut lengthwise and are dipped in a batter of Bengal gram flour with salt and turmeric, and deep-fried in mustard oil. Sometimes a small amount of poppy seeds is added to the batter. Some people prefer adding a small amount of baking powder to the batter to make it more crunchy. Beguni is an extremely popular street food in the cities. It is normally an evening snack in Bengali households and is a very common component of Iftar in Bangladesh during the month of Ramadan of the Islamic calendar.

Di San Xian - Chinese Stirfried Vegetables

Di San Xian which is literally known as three treasures of the ground, this dish goes for three different vegetables and they are potato, eggplant and green pepper.This stir fried potato, eggplants and green pepper dish aka Di San Xian is a popular dish of North Eastern part of China, as these three vegetables are most easily and the most common vegetables you can find at any market in China.This dish is very much served in Chinese restaurant and they use large pieces of this veggies. I picked this recipe from Omnivores Cookbook and the author of this site shared a healthier way of making this dish. Actually she sliced the potatoes and eggplants as thin slices to deep fry them quickly so that they absorbs less quantity of oil. Also frying with less oil gives them a slightly charred look and tender texture as much as like they are served in restaurant.

Dahi Baingan/Dahi Baigana

Dahi baingana is a traditional Oriya recipe prepared simply with yogurt, deep fried eggplants and tempered with mustard seeds, curry leaves. This eggplant in yogurt sauce is spiced simply with chopped green chillies, roasted cumin powder and thinly sliced ginger. Served along with a hot steaming rice, you can have this incredible dish or else simply as a snack if you love eggplants. This dahi baigana gets ready very much quickly than you can imagine. One of the easiest and the simplest dish i have ever cooked with eggplants. Many varieties of dahi baigana exists, i went on searching for a prefect traditional Odiya style dahi baigana and finally i landed to Oriya Food and loved the simplicity of this dish.

Maladu/Maa Laddoo/Pottukadalai Laddoo

South Indians makes couple of easy breezy laddoos quickly with dals and semolina. After the popular rava laddoo aka semolina laddoos, they do exists different dal based laddoos. My today's recipe goes for Maladu aka pottukadalai laddoo, pottukadalai is roasted grams which we usually make chutney out of this grams. This maladu goes for just five ingredients and you can make this laddoos in a jiffy. Maladu makes an excellent sweets to serve even to sudden guests as this lipsmacking laddoos are very much quick to make. The main ingredient for making this laddoo is melted ghee, the addition of ghee in this laddoo makes this maladu more tastier than the usual easy laddoos in which people use milk instead of melted ghee. However making this fried gram laddoos using melted ghee atleast once a while will definitely satisfy everyone's tastebuds.

Gulkhand Rava Sheera/Gulkhand Sooji Ka Halwa

I have couple of posts sitting in my draft and seriously i want to clear some as soon as possible coz my hard disc is getting tired of having all those pictures. Nowadays am getting very busy and obviously am so lazy to cook and click, thank god to all these posts sitting in my drafts. One among those posts is this Gulkhand Rava sheera, sheera is nothing our own Kesari. You can dish out kesari within few minutes and this dessert go usually for easy cooking. Semolina, sugar, ghee and nuts is quite enough to whip out this lipsmacking rava sheera, some add fruits while others add saffron or food colour to give an attractive colour to this simple dessert.

Hyderabadi Qubani Ka Meetha/Hyderabadi Apricot Dessert

Wiki says Qubani ka meetha is an Indian dessert made from dried apricots originating from Hyderabad. It is a common feature at Hyderabadi weddingsKhubani or Khobani is Urdu for apricot; it is believed that apricots were introduced to the subcontinent by Central Asians.Dried apricots from Afghanistan are especially prized for their flavor. Khubani ka meetha is a very popular dessert of Hyderabadi cuisine.Preparation of the dish involves boiling apricots with syrup until they assume the consistency of a thick soup or compote. The dessert is topped with blanched almonds or apricot kernels, and is traditionally garnished with malai, an extra thick cream, ideally from buffalo milk, but also with custard or ice cream.

Mushroom Cutlet/Mushroom Tikki

Cutlets aka tikkis makes an excellent party starters or snacks when served along with chutney or simply with ketchup. I tried making different dishes and fritters with mushroom, everytime i make mushrooms at home,my younger one says always 'no' to mushroom. But finally i got a prefect dish to feed him easily even without his knowledge. Yes this mushroom cutlet,he just enjoyed this crispy and sizzling mushroom tikki with his favourite ketchup sauce. Obviously i do make whenever i get button mushrooms from the farmer's market. Potatoes and pan sauteed mushrooms,onions coated with bread crumbs, flavoured with garam masala, chopped green chillies makes this fantabulous tikkis.

Amla & Pomegranate Cooler

Summer is incomplete without chilled drinks and an anniversary party is incomplete without a welcome drink or cocktail. Though alcholic and non alcholic storebought beverages exists,nothing can beat the homemade healthy drinks. Here comes one among those healthy drink, a quick,easy breezy, an excellent body cooler and also hassle free cooler simply prepared with Amla. Usually i do simple juice with amla aka gooseberries,this time i want to make it something differently with the juice,hence i tried adding pomegranate pearls, soaked sabja seeds aka basil seeds. Trust me this cooler is an excellent drink to serve anyone whoever visits you. Amla dont dominate much in this drink, since pomegranate seeds sits for a while in prepared amla cooler, they gives a mild subtle flavor to this cooler.

Vegetable Cheese Shots

Who will say no to these cute looking vegetable loaded cheese shots. Made with simple vegetables like grated carrots, red bell pepper and sweet corn, these shots makes an excellent party appetiziers or else as a simple evening snacks. However these healthy cheesy shots goes for baking obviously this cuties are definitely healthy and guilt free. Trust me,you will definitely enjoy these shots while they were still warm.Actually the original recipe goes for both cooked potatoes and chopped spinach, since my vegetable basket was almost so i tried making this shots with  all the vegetables i found simply from my fridge.
