Brittle is a kind of confection made with broken pieces of hard sugar candy with nuts like pecans, almonds or peanuts. These brittles have their own place especially in Christmas friendly candies list. Varieties of brittles exists if you go through google. I seriously want to make some old fashioned style of Peanut brittles since a while. When i picked Christmas candies as theme for this week's blogging marathon, i gathered all the ingredients to give a try to some Old fashioned aka grandma's style peanut brittles. Usually prepared with a hard sugar candy, old fashioned brittle calls for baking soda to bring a nice honeycomb like texture to this candies. Its quite a real fun to see the way the sugar syrup gets changed in colour once the baking soda is added to them. I seriously enjoyed making this extremely delicious peanut brittle for this week's theme.
Usually peanut brittle are prepared a small flattened bites, but i want to turn them as our Indian style of brittles hence i opted for a small plate than a flat pan. Else this old fashioned peanut brittle are just prefect to pack as Christmas candies to share with your near and loved ones. Just with simple and easy cooking process, one can make this brittles with less efforts. And this brittle is prepared without corn syrup which is not much needed for my knowledge, but still if you have corn syrup in your pantry dont forget to use them for making this brittles. My kids enjoyed this brittles to the core and am planning to make these candies again
1cup Sugar
1cup Roasted unsalted peanuts
1/4tsp Baking soda
2tbsp Butter
Grease a plate or baking pan with butter and keep aside.
Take the sugar in a heavy bottomed pan, cover the sugar with enough water.
Cook the mixture in medium heat until the sugar gets dissolved and change the colour a bit.
Add in the butter and cook for a while.
One the sugar syrup turns thickens, add the unsalted roasted peanuts, vanilla extract, give a stir.
Remove it from the heat and mix immediately the baking soda.
Pour this mixture in a greased pan or plate.
Let it cool completely.
Break the peanut brittle as you desire and conserve them in an air tightened box.
Enjoy this festive gift without any guilt.

Peanut brittle is one of the recipes in my to do list. Both hubby and Sruti love peanuts. The texture of your brittle is so good because of the baking soda added. Need to try this.

Baking soda addition have made these brittle different than our chikki. Nonetheless they look very inviting.

I made the peanut brittle as well but used corn syrup as well in the syrup. This looks so delicious!
