Vegan Bottlegourd & Rice Tikki

If you have leftover rice and some leftover bottlegourd in your fridge, dont ever think for a long how to finish them. Just give a try this easy breezy tikki. Actually this idea of making tikkis with bottlegourd and rice came to my mind when i saw the quantity of rice and bottlegourd left in my fridge. With a tiny piece of bottlegourd, personally for me its quite had to make a curry or something as side dish. Immediately i cooked some potatoes and give a try to this different tikki.This tikki makes an excellent eveni,g snacks especially for kids after a long hectic day. Any type of cooked rice suits prefect for making this tikki and trust me you will love it.

Vegan bottlegourd & rice tikki

Grate the bottlegourd and saute them for few minutes before adding to the potato and rice mixture, also this tikki doesnt goes for chopped onions or chillies. Chilly powder will take care of the spiciness. No chopping but you just need to grate the bottlegourd and thats all. You can dish out this tikkis in very much less time and this tikkis served with ketchup will definitely satisfy any hungry tummy. Served warm with ketchup, one can hardly finish a whole plate of this tikki without any guilt. Just give up the routine fried rice with leftover rice, make this tikkis and give a second life to the leftover vegetables and rice.

Bottlegourd & rice patties

1/2cup Bottlegroud (grated)
1/2cup Leftover Rice (cooked)
1cup Potatoes (cooked & mashed)
3/4tsp Chilly powder
1tbsp Cornflour
Salt
Oil

Heat few drops of oil, fry the grated bottlegourd until they get slightly cooked.

Take them in a bowl,add in the cooked rice, cooked potatoes,chilly powder,corn flour,salt and mix everything well.

Make small tikkis out this mixture and pan fry until they turns brown on both sides.

Serve hot with ketchup.
