My today's recipe sounds almost like Bharwan baingan, the famous stuffed eggplant curry. But my version is definitely an easiest one, you can prepare this whole brinjal fry within few minutes, no grinding, no chopping and no sauting for hours. Just a simple spice mix makes these incredible looking brinjal fry. Actually this recipe goes for just three ingredients eventhough oil and salt is used in this fry. These whole brinjal fry is going to be a part of this week's blogging marathon and the theme is Just 3 ingrdients, as per rule Sugar, salt and oil are not considered as one among the three ingredients we can use.So this whole brinjal fry suits prefect for the theme.

Baked Spicy Chickpeas
If you are searching for a simple, quick, guilt free and an easy breezy snacks, then you should take a look at this baked spicy chickpeas. This chickpeas takes hardly less than 20-25 minutes to get ready, you can simply bake them or else cook them through microwave oven according to your desire. But i opted for oven baking eventhough you can deep fry these spicy chickpeas easily. Instead of deepfrying, i simply baked them. Banana, Flaxseed & Chocolate Icecream Shake
After relishing few scoops of homemade dark chocolate icecream i couldnt resist to whip out a simple but still a delicious and healthy shake with banana and flaxseed. Needless to say how healthy flax seeds are, obviously i dont forget to add them quite often in our weekly menu. I do variety of dishes with flax seed meal. Actually flax seed have their important place in my pantry. If you check my space, you can find variety of dishes i have dished out with this incredible seeds. Since flax seeds are rich in omega 3, i dont hesitate a second to add them especially in our rotis and in most of our summer special beverages. Obviously my today's post goes for 3 ingredients shake and trust me this shake is definitely a healthy summer drink.

Kyethun Kyaw - Burmese Onion Fritters
They do exists varieties of fritters made simply with onions, one of my recent try is from Burmese cuisine. If you have noticed i have been posting fritters for this week's blogging marathon, after two delicious different fritters, today am sharing this incredible onion fritters aka Kyethun Kyaw which is quite essential to garnish Burmese traditional dish of Mohinga. These onion fritters are very easy to dish out and the flour mixture goes for this fritters is very interesting and easy as well. Actually four flours are used in making this fritter's batter. Rice flour, glutinous rice flour, self raising flour and chickpeas flour makes this dangerously addictive fritters. These fritters when served along with a chili dip makes an excellent evening snacks.

Zucchini Fritters
Eventhough my today's recipe calls for fritters, they are not deepfried but something different from the usual deepfrying. Yes these zucchini fritters sounds as much as like pancakes. One of the easiest fritters you can dish out just in few minutes. These fritters are unbelievably easy to do, just grate zucchini, drain them completely with a cheese cloth and add in other ingredients to make a thick paste. Then just drop a tablespoon of fritter batter in a pan to cook as much as like pancakes. Flip the fritters,cook on both sides until they turns golden brown and serve with a spicy dip or else simply with cheese based dips.

Bakwan Sayur - Indonesian Vegetable Fritters
This week is going to be a fritter's week, yes i picked bring on fritters as theme for this week's blogging marathon. Obviously for this week's three day's blogging is going to be full and full deep fried fritters that too from other countries. Its really very interesting to see fritters from countries sounds almost like our own Indian fritters. My today's recipe have few ressemblance with South Indian fritters. Bakwan Sayur is an Indonesian vegetable fritters i picked from the wiki link given by Srivalli. Bakwan sayur makes an excellent starter or snacks. You can make these crispy beauties with easily available ingredients and vegetables. Just carrots and cabbage is quite enough to make this crispy fritters.

Vegan Bottlegourd & Rice Tikki
If you have leftover rice and some leftover bottlegourd in your fridge, dont ever think for a long how to finish them. Just give a try this easy breezy tikki. Actually this idea of making tikkis with bottlegourd and rice came to my mind when i saw the quantity of rice and bottlegourd left in my fridge. With a tiny piece of bottlegourd, personally for me its quite had to make a curry or something as side dish. Immediately i cooked some potatoes and give a try to this different tikki.This tikki makes an excellent eveni,g snacks especially for kids after a long hectic day. Any type of cooked rice suits prefect for making this tikki and trust me you will love it.

An empanada also called pastel in Brazilian Portuguese and pate in Haitian Creole is a stuffed bread or pastry baked or fried in many countries in Latin Europe, Latin America, the Southwestern United States, and parts of Southeast Asia. The name comes from the Galician, Portuguese, and Spanish verb empanar, meaning to wrap or coat in bread.Empanadas are made by folding dough or bread with stuffing consisting of a variety of meat, cheese, vegetables, fruits, and others. My today's vegetarian empanadas goes for an interesting cheesy stuffing, yes i stuffed this empanadas with paneer along with mixed vegetables. Obviously if you want to make a super cheesy paneer empanadas just skip the vegetables. However i loved this vegetable loaded paneer empanadas.

Wheat Berry Chivda
Few days back while going through a tamil magazine, i crossed an easy chivda with wheat berries, this idea of making chivda with wheat berries pulled me to give a try immediately. Actually this chivda is an interesting evening snacks especially for kids. Chivda is usually prepared with thin rice flakes, cornflakes etc. For a change if you saw wheat berries from your nearby stores, just get them and give a try to this chivda. Also this chivda doesnt need deepfrying, obviously you can make this chivda quite often. But the only disadvantage of this chivda is just you need to prepare them in small batches.

Eggless Dark Chocolate Icecream
Chocolate is our weakness and i dont want repeat everytime i post anything with chocolate, but however i couldnt stop myself to talk chocolates. Chocolates have their important place in our diet, every morning kids starts their day with chocolate based drinks or cereals. We are living in a country, where chocolate is an obligation in every products we buy from stores. Obviously we cant survive without chocolates. I couldnt stop myself to make a simple, easy breezy eggless chocolate icecream at home with simple ingredients at home. Eggless Peanut Butter Icecream with Crushed Salted Peanuts
Peanut butter is my weakness, i can survive for many days with a bottle of peanut butter. After nutella, i cant live without peanut butter. Peanut butter have an important place in my pantry, whenever i ran out butter for making bakes, i'll go immediately with peanut butter. You can make delicious dishes out of this nutty incredible spread. One of my recent trial with peanut butter is this eggless but still a smooth and softy icecream. As i told this week is going to be an icecream week, after a very catchy carrot icecream, i couldnt stop myself to share this easy peasy peanut butter icecream i simply prepared with smooth peanut butter,condensed milk,crushed peanuts and cream. Just with these ingredients, you can make this icecream within few minutes, no cooking is need obviously you just need a hand beater to whisk this icecream.

Eggless Carrot Icecream
Weather is still bit chilled here, but summer is not far. However this chilled weather cant stop us from enjoying some chilled desserts. I have already tried couple of icecreams with different fruits and this time for a change, i couldnt resist myself to give a try to a simple carrot icecream. Trust me, i was totally surprised to the texture and the taste of this vegetable icecream. Usually carrots have their own mild sweetness and cream, milk added to this icecream gives a smooth texture to this simple,delicious yet a catchy ice cream. You may wonder why am talking about ice creams, this week is going to be a icecream week in my blog. Am gonna share three different icecreams which are completely homemade with simple ingredients.
