Eggless Dates & Chocolate Muffins

Dates, this dry fruits is loaded with many nutrients, vitamins and have many more health values, but this dry fruits is one among the most hated fruits by most of the kids.Even my kids are not big fan of dates, atleast they will eat them if i make bakes or shakes with this healthy fruits. Its been a while i baked muffins with dates, recently i got a huge box of dates from my Moroccon neighbour who didnt forget to brought me some dates after a trip to her country. After making some shakes, i couldnt resist myself to bake some muffins out of those super fresh dates. As usual, i masked the addition of dates with the humble chocolate, anything with chocolate is my kids favourite. If am trying to make anything new or want to feed them with healthy stuffs in their food, i'll go for chocolates especially in bakes, this trick works absolutely incredible everytime and hence this method became a ritual at home if i plan to feed my family with healthy ingredients.


Dates when cooked and pureed makes an excellent egg subsitute, if i ran out eggs or dont feel like baking cakes with eggs, immediately i'll go for eggless bakes especially with fruit purees. This time in this muffins i simply replaced the eggs with homemade dates puree. Dates puree is prepared just by cooking chopped dates with enough water and grind them as fine paste. Quite an easy homemade fruit puree to make, this puree can be conserved very much for a long if they are stored in fridge. Also you can add this dates puree in your beverages to make them more healthy, however making baked goodies with this homemade dates puree is one of the best way to feed everyone at home easily.This muffins is going for this week's blogging marathon as i picked cakes and muffins with fruits and vegetables.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#45. 

Eggless muffins with chocolate and dates


2cups All purpose flour
1/2cup Canola oil
1/2cup Chopped chocolate chunks
1tbsp White vinegar
1/4cup Hot water
1/2cup Dates puree
3/4cup Honey
1/2tsp Baking powder
1tsp Baking soda

Dates Puree:
Soak a cup of pitted dates in hot water for half an hour, grind them as fine puree and use them as per need..

Preheat the oven to 350F grease the mini muffin tray or use silicon muffin mould tray.

Sieve the all purpose flour along with baking powder and baking soda.

Meanwhile mix the chopped chocolate chunks to the hot water,stir well until the chocolate melts completely.

Beat together the oil and honey for few minutes,add dates puree,white vinegar,melted chocolate, beat everything together until they get well mixed.

Finally add the flour mixture, mix everything well with a spatula,dont overmix the muffin batter..

Pour the muffin batter to the already prepared muffin mould,bake for 15-20minutes until a skewer inserted comes out clean.

Let them cool completely.

Enjoy.
