Mixed Vegetables Channa Sundal

Evening snacks is the best part of the day, after an hectic day everyone at home love to have something filling for their snacks. With loads of proteins, sundal makes a healthy and definitely a filling evening snacks.Today's post goes for a catchy vegetable rich sundal, actually adding vegetables to usual sundal makes this already protein packed sundal more interesting and definitely super healthy.Sundal can be prepared with any beans or legumes but however most of us makes sundal with chickpeas aka channa. Chickpeas, this nutritious legumes are my favourite, tempered or not i can have a bowl of chickpeas sundal anytime. However everyone at home love this chickpeas sundal when tempered with spices and grated coconut.

This time when i prepared chickpeas sundal, i planned to add some grated vegetables instead of going for usual spices. Trust me, the addition of grated vegetables turned this sundal more delicious and totally different from the usual sundal,one of the best way to sneak vegetables along with the healthy chickpeas. Mixed Vegetable Channa sundal, Chickpeas mixed vegetable sundal, Chickpeas masala sundal

3cups Chickpeas (cooked)
1no Onion (chopped)
1cup Grated mixed vegetables (carrot, zucchini,cabbage)
2nos Green chillies (chopped)
2nos Garlic cloves (crushed)
1/2tsp Fennel seed powder
1/2tsp Garam masala powder
1/2tsp Amchur Powder
1tsp Chaat masala
Curry leaves
Few coriander leaves
Salt
Oil

Heat enough oil, fry the fennel seed powder.

Now add the chopped onions, grated ginger,crushed garlic,curry leaves,chopped green chillies, stir until the onions turns transculent.

Add the grated vegetables and salt,cook for few minutes.

Finally add the garam masala powder, chaat masala, amchur powder,cooked chickpeas and chopped coriander leaves,give a stir.

Put the flame in simmer and cook for few minutes..

Enjoy as evening snacks.

I sometimes add onion and carrot instead of coconut but have not added cabbage so far. This version makes it more healthier and a guilt free snack.
