Cant believe,we finished already a week of Bake-a-thon, days are running very quickly for me. And the weather makes us so lazy,actually we are all waiting for the festival holidays obviously am motivating myself to be bit active until the holidays comes. Its too hard coz the weather is too cold and its very sad to see the daylight gets reduced as the winter is approaching very fast. To keep myself active during this nasty weather, i'll keep on baking especially during weekends as my weekdays are very busy. Today's post goes for a flavourful baking, yes garlic knots. These garlic flavoured bread makes an excellent evening snacks to have with a cup of tea or coffee or else simply you can enjoy them with a bowl of warm soup for your dinner. Trust me, these knots are very hard to resist and they gets vanished very much quickly than you can imagine.
Garlic knots are very easy to make, apart from the yeasted dough, this knots goes for a simple garlic butter preparation with chopped coriander leaves. Completely egg free, these tiny knots goes for easy breezy shaping as well. If you dont like knots, you can still roll them as snails and bake them simply as garlic rolls. However these knots makes an excellent finger food, since its brushed with a garlic and coriander leaves butter, one can have this bread without any spread.
For pizza dough
2cups All purpose flour
2tsp Active Dry yeast
1tsp Sugar
1tbsp Olive oil
1/2tsp Salt
1/2cup Luke Warm water
In a bowl,take the luke warm water, mix sugar and yeast with it and leave the yeast for 10 minutes till the mixture turns frothy.
Now in a bowl mix the flour and salt, add the frothy yeast mixture into the flour and make dough with additional water only when it is required.
Dough should be smooth not wet. Knead the dough for 10 minutes.
Now drizzle the dough with olive oil and transfer it into a bowl and cover it with the cling film.
Let the dough rest at a warm place until it doubles in size.
The dough is ready for use.
Garlic knots
Home made pizza dough
2tbsp All purpose flour(for dusting)
1tbsp Olive oil
3tbsp Unsalted butter
6nos Garlic cloves
2tbsp Coriander leaves
Kosher salt (to sprinkle)
Preheat oven to 350F, line the baking tray with parchment paper.
Divide the dough in half, keeping half covered under a wet kitchen towel.
Roll out the half of the dough on a lightly floured surface with a rolling pin, to make 8 inch square.
Cut the square in half with a sharp knife to form two rectangles.
Cut each rectangle into 8-12 strips (the cuts should be made so that the strips are shorter and thicker, rather than longer and thinner).
Tie each strip into a knot and then arrange the knots on the lined baking tray.
Cover them with a kitchen towel and repeat the process with the second half of the dough.
Just sauté the chopped garlic cloves in the olive oil, add the butter.
Cook just that butter has melted and mixture is warmed.
Remove from heat and mix in chopped coriander leaves.
Brush this garlic-coriander butter mixture on the top of the knots, sprinkle the kosher salt.
Bake the knots for 5 minutes, then rotate the baking tray and bake an additional 5 minutes or until golden brown and fully cooked.
Serve hot or with some piping hot soup on this rainy and cold day.

Garlic knots are cute and like them like a knot. A little confused about the pizza dough recipe. Can I use even pizza dough recipe to make the knots? Did I miss reading something?
