If you are searching something quick, filling for an easy lunch or dinner, then you should check this pulao. This vermicelli pulao goes for an easy breezy preparation, once cooked this dish makes an excellent lunch or dinner when served along with raita or pickles. Instead of adding many vegetables, i just went with babycorns with cashews. This dish takes hardly less than half an hour and one can have their lunch or dinner without any fuss.I make this simple pulao whenever i feel lazy or else if am alone at home.

1cup Vermicelli/Semiya (fried in a teaspoon of oil)
1/2cup Babycorn (chopped)
1no Onion (chopped)
1no Tomato (big & chopped)
2nos Green chillies (slit opened)
1/2tsp Ginger garlic paste
Few curry leaves
1/2tsp Fennel seeds
1no Cinnamon stick
1no Bay leaf
1tsp Garam masala powder
Fried cashew nuts
1+1/2cups Hot Water
In a medium pan, heat the oil, add the bay leaf,cinnamon stick, fennel seeds,fry until they turns brown.
Add the curry leaves, slit opened green chillies along with the onions and fry till translucent.
Add the ginger garlic paste,chopped tomatoes, the salt, cook everything well.
Add the garam masala, chopped babycorns and fry for few more minutes.
Now add the hot water and bring it to boil, slowly add the vermicelli and stir well the vermicelli.
Cover with a lid and cook for 5-6 minutes or till the water has been absorbed, but it is still moist.
Turn off the heat and leave to rest for 5 minutes, add the fried cashews and serve with some raitha and pickle.

Vermicelli pulao is lot quicker than the rice version and this baby corn version sounds delicious.
