You might have noticed that this week's blogging marathon goes for an interesting theme, yes am posting dishes under the theme cooking for 1. After an easy breezy vermicelli pulao with babycorn, i couldnt resist to post my lil one's favourite rice. Whenever i have leftover rice or feel like making a quick dish, i dont forget to make simple egg masala rice, this time i couldnt stop myself to add some chicken sausages to make this simple rice bit meaty and eggy.
This masala rice can be prepared in a jiffy if you have a day old rice in fridge or leftover cooked rice. Just you need to chop an onion, beat the eggs and some frozen green peas is quite enough to make this flavourful rice. I usually use briyani masala powder to spice this rice but this time i went for garam masala and pepper powder to spice up this lunch box friendly egg and sausage masala rice.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#49.
2cups Cooked rice
1cup Frozen green peas
1/2cup Chicken sausage(sliced)
1no Onion (big & chopped finely)
2nos Eggs (beaten)
1/2tsp Garam masala powder
1/2tsp Pepper powder
Salt
Oil
Heat oil, add the chopped onions and saute until they turns transculent.
Add the frozen peas,chicken sausage, salt and cook for few minutes.
Meanwhile cook the beaten eggs,salt, pepper powder in a pan separately and scramble it until the eggs gets well cooked.
Now add the rice,garam masala powder, scrambled eggs to the cooking peas, toss everything gently.
Adjust the salt and pepper powder.
Put off the stove and serve hot.

Priya, now that's one stunning looking picture and imagine doing all that for just yourself..super like it...though I would substitute it with veg options..this looks delish for the kids though!
