Once summer starts here, we dont get oranges as they are seasonal fruits here, before the oranges gets disappear from my nearby fruit stall, i want to make some muffins to pack them for our after lunch snacks. Since i had some carrots sitting my fridge, i baked out this orange and carrot muffins. They came out extremely good and everyone just enjoyed them. Mild orange flavour with grated carrot makes excellent spongy and very moist muffins to enjoy thoroughly with a cup of tea or coffee. You can start your day very well with these muffins as they are loaded with healthy stuffs in it. They are eggless and also butterless, obviously a fabulous guilt free muffins.These muffins makes an incredible dessert when served along with few scoops of icecream or else simply topped with cream cheese frosting.
As you know already, am running this week's of blogging marathon with Fruits in any form, after two different dishes with fruits, my today's post goes to this orangish muffins. Carrot and orange works awesome in this bake and trust me one of the best way to sneak carrots too. Since i went for some finely grated carrot, none at home noticed that this muffins are made with carrots, am sure this muffins makes an excellent choice to feed carrots easily to kids. 2cups All purpose flour
3/4cup Sugar
1tsp Baking powder
1/2tsp Baking soda
1/2cup Yogurt
1cup Orange juice
1/4cup Honey
1/2cup Oil
1tsp Vanilla extract
1cup Grated carrot
1tbsp Orange zest
Preheat the oven to 350F, grease and line the muffin tray with muffin cups.
In a bowl, sift the flour,baking powder,baking soda and salt.
Meanwhile in a small bowl whisk together the sugar,honey, yogurt,grated carrot,oil,orange zest,orange juice and vanilla extract.
Pour the wet ingredients to the dry ingredients, whisk lightly. Dont overmix the batter.
Spoon the batter evenly to the already prepared pan.
Bake for 20-25 minutes until a skewer inserted comes out clean.
Transfer to wire rack and cool it.
Carefully remove the muffins from the pan, cool completely.
Enjoy with your favourite drink.
