I never get bored of making one pot meal, actually one pot meal makes the life easier and you can happily feed your family without any hassle.I have already shared many varieties of one pot meal but still they are so many varieties of one pot meal to share. One of my recent trial with masoor dal was this irresistible sambar bath. Sambar is a routine dal based gravy at home, we either make sambar with toor dal or moong dal else with a combination of both dals. I cook very rarely with masoor dal,dunno why i never been attracted by this dal. Recently my H went for Indian grocery and picked a packet of masoordal instead of toor dal, obviously i have to finish the packet of masoordal. Hence i tried my hands with masoor dal sambar bath.
Am running my second week of blogging marathon with Lentils in three way as this week's theme, am kick starting this week's blogging marathon with this healthy and protein rich nutritious sambar bath. You can carry very well this lipsmacking one pot meal in your lunch box. Served along with a spicy side dish, one can have a super filling and satisfying meal. I packed this sambar bath for our lunch along with fried eggs, even my younger one who is not a big fan of this kind of dal based one pot meal loved this vegetable loaded sambar bath.
1cup Rice
1cupMasoordal
1tbsp Tamarind paste
3cups Mixed Veggies(any veggies of ur choice)
1tbsp Sambar powder
Salt
Few curry leaves
2tbsp Coriander leaves (chopped)
1tsp Ghee
Cook rice and dal together with enough water until they turns soft, meanwhile cook the veggies with enough water until they get half cooked and keep aside.
In a large pan, mix the tamarind paste with 3cups of water, add the salt, sambar powder, curry leaves and the already cooked veggies and cook for few minutes until the veggies get well cooked.
Gently mash the rice-dal mixture and add to the cooking veggies, cook for a while in simmer, put off the stove.
Top the rice with ghee..
Serve hot with papads or either with pickles.
