Am an ardent fan of deep fried snacks but now am keeping myself away from it. But kids just love crispy fritters, obviously we cant say no to them though they have rarely deep fried snacks. When my lil one asked for a spicy snacks, i couldnt say no to him, and prepared this wheat flour based diamond cuts with loads of sesame seeds and kasuri methi. Usually we make diamond cuts with maida or all purpose flour, my today's post of this diamond cuts calls for whole wheat flour, yes i deduced the quantity of maida and went for whole wheat flour, semolina to make them more healthy and crunchy. Sesame seeds and kasuri methi added to the dough makes this diamond cuts very flavourful and absolutely nutty.
Kids loved this snacks very much and they just went on munching these beauties. They didnt even noticed the addition of kasuri methi in this diamond cuts which sounds prefect for me. Eventhough i try to feed my kids with healthy stuffs, sometimes we need to think twice to make them eat. Trust me you can feed your kids with less efforts by making this kind of healthy fritters and they will definitely enjoy them thoroughly. 1cup Wheat flour
1/4cup All purpose flour
1/4cup Fine semolina
1/2tsp Baking powder
1tbsp Kasuri methi/dry fenugreek leaves
1tsp Red chilly flakes
2tbsp Melted ghee/ hot oil
3tbsp Sesame seeds
Salt
Oil for deep frying
Take the wheat flour, all purpose flour, fine semolina, baking powder, kasuri methi, red chilly flakes, melted ghee, sesame seeds and salt in a large bowl.
Add gradually water and knead everything as a soft dough.
Keep aside for half an hour.
Divide the dough into two, dust the dough with flour and roll the dough as a round disc,
Cut the disc as small diamonds, meanwhile heat the oil for deep frying.
Transfer the diamond cuts to a baking sheet and continue with the remaining dough.
Once the oil is hot, drop enough diamond cuts and fry in medium flame until they turns golden brown, drain the excess of oil with a paper towel.
Repeat the frying process, and store them in an air tightened box.
