Soyakheema Pizza Pinwheels

Making pizza at home is definitely an interesting one as this pizza dough doesnt need any specific ingredients to get ready, usual basic ingredients makes pizza dough. And this dough takes very less time to get ready though the resting time depends upon the weather and the humidity. I have baked this soya kheema stuffed pizza pinwheels for a weekly baking event few weeks back, but unfortunately i couldnt write a post before the deadline. Obviously this pizza pinwheels were sitting in my draft for a while. Finally am writing this post today as am running 13 days of baking for this month of december. Yes Bake a thon happens every year during the month of december and we fellow bloggers run this baking marathon thrice a week.

Coming to my today's post, this ultimate super spongy pizza pinwheels goes for a simple but yet a delicious stuffing with minced cooked soya nuggets with chopped bellpeppers and obviously loads of cheese. Served along with salad, am sure this pinwheels makes an excellent meal. You can serve these pinwheels also as a starter or snack for a get together, definitely a crowd pleaser.Addition of minced soya nuggets makes this pinwheels more healthy.

Pizza pinwheels, Soyakheema pizza pinwheels

2+1/4cup All-purpose flour
1+1/2tsp Instant yeast
1tsp Salt
2tbsp Sugar
2tbsp Milk powder
1/2tsp Baking powder
1tbsp Butter (melted)
2tbsp Olive oil
1cup Milk (luke warm)

Filling:
4Tomatoes (pureed)
1tbsp Garlic (minced)
1tbsp Chilly flakes
2tbsp Mixed spices
Salt
2tbsp Olive oil
1/4cup Water
Few Corriander leaves
1cup Minced cooked soya nuggets
1/2cup Capsicum  finely chopped
1/2cup Cheddar cheese

Add Flour, yeast, salt, sugar, milk powder, baking powder, melted butter, oil in the bowl.

Mix just all the ingredients until they gets combined together.

Pour the luke warm milk and knead everything well and knead for 10 more minutes.

Transfer the dough in a bowl coated with oil. Make sure to coat oil all over the dough. Cover the bowl with a damp cloth and leave in a warm place for 1 or 2 hours until the dough double in volume.

Heat oil in a saucepan and fry the minced garlic  for a minute.

Add the tomato puree and let it boil. Add water and once it boils bring down flame to low.

Add salt, chilly flakes,cooked minced soya nuggets,mixed spices and mix well.

Once the sauce gets thick, add chopped corriander leaves and let it cool.

Once the dough is double in volume.Punch it down and knead it for few minutes. Roll the dough into a rectangle which is 1/4 inch thick.

Spread the sauce all over the rolled dough.Sprinkle now the finely chopped capsicum and the grated cheese.

Roll the dough lengthwise as a log.Use a sharp knife to cut them a medium sized individual rolls.

Grease a baking tray with oil and place the rolls spaced just an inch apart. Cover with damp cloth and let it prove again for 15 minutes until they double in size.

Bake in pre-heated oven for 15 minutes at 200 degree C.

Brush the rolls with olive oil once they comes out of the oven,

Serve hot.
