Who will say no to warm pancakes drizzled with honey or maple syrup for their breakfast??definitely not me..Everyone at home love pancakes, this time i tried my hands in making a some fluffy eggless coconut pancakes. I love bakes with coconut and seriously i want to make some pancakes with coconut and finally i prepared some last week. Coming to this beautiful pancakes, i quickly prepared these beauties with all purpose flour,dessicated coconut grounded as powder,honey along with buttermilk as eggless pancakes. They turned out extremely fluffy,soft and super filling. Its completely eggless and sugarless,a prefect breakfast to kick start a day.
2cups All purpose flour
1cup Dessicated coconut (grind as fine powder)
1/2tsp Baking powder
1/2tsp Baking soda
2cups Buttermilk
1/2cup Honey
2tbsp Oil
Oil for cooking
Take the flour and grinded coconut powder in a bowl,add the buttermilk and let them sit aside for half an hour, now add the honey,baking soda,baking powder, oil and make as thick batter..
Heat few drops of oil,pour a ladle of this pancake batter,cook on both sides until they get well cooked.
Serve warm with nutella spread or maple syrup.

This pancakes will definitely please your tastebuds if you love pancakes for your breakfast or for a lazy sunday brunch. With simple ingredients without eggs and sugar makes this excellent coconut loaded pancakes, served warm with honey or chocolate sauce one can have more than two pancakes without any fuss.
