Vegetarian Bolognese Sauce/Vegetarian Ragu Alla Bolognese

Bolognese sauce is a popular Italian sauce which is also known as Ragu alla bolognese or simply ragu is a meat based sauce originated from Bologna, Italy. Hence this sauce got its name as Bolognese sauce, this sauce is cooked usually by slow cooking though this dish asks for several cooking techniques. Usually served with tagliatelle pasta, this meaty sauce makes an excellent sauce to enjoy with pasta. But my today's recipe goes for a delicious Vegetarian version and completely vegan as well.Am not a vegetarian but i dont cook red meat especially beef. Obviously this vegetarian version is definitely a great alternative for this sauce lovers. When i went through google, i saw many versions of this vegetarian sauce, i finally decided to go with my own way of preparing this vegetable loaded sauce.

Vegan Vegetarian Bolognese Sauce

Though this sauce can be prepared simply with a mix of finally chopped vegetables, i prepared this vegetarian sauce with a combination of vegetables and black beans. The addition of black beans turned out this sauce more interesting and nutritious. However you can also add red kidney beans instead of black beans. With simple ingredients and loads of vegetables,this interesting vegetarian bolognese sauce will definitely please everyone's tastebuds when served along with the pastas of your choice. This post is going to this week's blogging marathon as am running this week's theme with One sauce two dishes.

Vegetable & Beans Bolognese Sauce, vegetarian Bolognese Sauce

1cup Onions(chopped)
3cups Mixed minced vegetables
1/2cup Minced mushrooms
1cup Cooked & slightly mashed black beans
1large can Whole tomatoes 
1cup Tomato puree
3nos Bay leaves
3sprigs Thyme
1tsp Coriander seeds
2nos Cloves
1no Cinnamom stick (big)
1tsp Dried herbs /Herbs de Provence
3nos Rosemary sprigs
1no Dry Red chilly
1tsp Pepper powder
Salt
3tsp Olive oil

Take a small muslin cloth, put the coriander seeds, cloves, cinnamon stick,rosemary sprigs, dry red chilly into the muslin cloth and tie them well to make a small bag, keep aside.

Heat olive oil in a large pan, add the bay leaves, thyme sprigs and fry them until a nice aroma comes from.

Now add the chopped onions cook until they turns tender,add the minced vegetables, minced mushrooms.cook them until until the vegetables gets half cooked.

Add the canned whole tomatoes, cooked black beans, tomato puree, pepper powder, salt and basil leaves, add the muslin bag with spices now to the vegetables.

Add enough water(adjust your sauce as per your need) to the vegetables.cook them atleast for half an hour in simmer.

Remove the muslin spice bag, serve hot with any sort of Pastas.
