If you want something crispy, an excellent munchies for your cup of tea or coffee for your evening snacks, you should check my today's instant vadas loaded with onions. Very simple to make, these vadas are completely instant and no grinding is needed. Apart from chopping onions and green chillies, these crispy poha aka rice flakes vadas are very quick to prepare. Usually vadas are prepared by soaking dals for more than two hours and grinding them as bit coarse paste or smooth paste depending the dals. These poha vadas are prepared by just soaking thin rice flakes for just few minutes. Once they are soaked , drain them and mash them nicely with your fingers to make as a thick paste, add the chopped onions, chopped green chillies and spices to the paste, shape them as vadas and fry them. Usually white rice flakes is used for dishing out these crispy fritters, however thin red rice flakes works fabulous though the colour of the vadas will be bit dark in colour than the white rice flakes. 2cups Red rice flakes/Rice flakes (thin variety)
1tbsp Rice flour (optional)
1 Onion (big & chopped finely)
2nos Green chillies (chopped)
1/2tsp Fennel seed powder
1/2tsp Ginger (grated)
Salt
Few curry leaves
Oil for deep frying
Soak the poha in water for few minutes, drain them well and mash them with your fingers.
Take care to strain them well, in case if its too mushy, add rice flour to it.
Now add the chopped onions, chopped green chillies, fennel seed powder, grated ginger, salt, curry leaves.
Mix everything well and make medium sized vadas from them.
Heat oil for deepfrying, once the oil is hot, drop the shaped vadas and fry in medium flame until they turns golden brown in colour.
Remove the vadas and drain the excess of oil with paper towel.
Serve hot.
