Mini Baked Veg Pizza Empanadas

Empanada is a pastry which is either baked or fried depending upon many countries in America and Spain. I love baked versions of Empanadas, and this dish is definitely an excellent munchies to have either for snacks or for a meal when served along with either salads or with a bowl of soup. I have already tried couple of Empanadas, though i have few versions to try. Hence my today's post is an another interesting and kid's friendly empanadas which is baked few days back for our evening snacks. Pizza Empanadas, my kids went crazy when i served them once these empanadas came out of the oven. These tiny cuties vanished very quickly than i imagined.

Baked Veg Pizza Empanadas


Am running this week's blogging marathon with Kid's delight - Movie Time Munchies, obviously these week's posts for this theme are going to be some interesting munchies. Empanadas can be stuffed with anything savoury or sweet fillings depending upon your tastebuds. Seriously am planning to try some sweet versions as my younger one was asking for some nutella empanadas. However everyone at home enjoyed thoroughly this Pizza empanadas which is simply prepared with homemade dough, store bought pizza sauce, some chopped onions and grated cheese. Very simple but yet a delicious Empanadas to munch if you are looking for something filling and savoury while watching a movie.

Baked Pizza Empanadas, Pizza Empanadas

For Dough:
1cup All purpose flour
1cup Whole wheat flour
1tsp Baking powder
1/2cup Oil
Salt
1/2cup Water

Storebought pizza sauce
Chopped Onions
Grated cheese

Pre-heat your oven to 350F. Line up  your baking tray with baking paper .

Take the all purpose flour,whole wheat flour,baking powder, salt in a bowl. Add slowly the oil.

Use your finger tips to combine the oil and flour thoroughly, slowly add the water and knead everything as a soft dough.

Baked Vegetable pizza Empanadas

Divide the dough into 10-11 balls. Roll each dough as small sized circles.

Drop enough pizza sauce, top it with onions and cheese into each flattened dough, fold each of them and seal well using a fork.

Arrange them on a baking paper and bake for about 20 to 30 minutes until the top turns golden brown.

Cool just a bit on wire rack.

Serve them hot with any dips of choice.

Looking so inviting, great part of these empanadas is that they are baked. I think due to maida they are baked nicely. I tried with wholewheat but this look did not come. Great share.
