Mushrooms, though am a great fan of this edible fungus, my lil one is a complete hater. However i dont forget to feed him with this antioxidant rich mushrooms which is quite low in fat and calorie. I know adding those mushroom chunks with his favourite vegetable, he just cant discard them, hence i opted for our favourite batata vada. Batata vada is quite a popular street food which is quite known for their deep fried outer layer with a delicious potato masala inside. I have made my own twist by adding finely chopped mushrooms to the usual potato masala to dish out some ultimate Mushroom potato fritters. And i opted for Appe pan aka Paniyaram pan just to avoid deep frying.

Yes its not an easy task to feed vegetables to kids na, and being a mom of three i always confronted this situation. However i always overcome this situation just by adding my kid's favourite ingredients just to feed them easily. Coming to this Dhingri aloo batata vada, its quite an interesting snack food to make and feed your kids easily especially when they are back to home after a long day at school. Mix and match with your favourite vegetables or beans, and dont forget to keep potato masala as the main ingredient.

2nos Potatoes (big & cooked)
1/2cup Mushroom(cleaned & chopped finely)
1no Onion(chopped finely)
3nos Green chillies (chopped)
1tsp Ginger (grated)
1/4tsp Mustard seeds
1/4tsp Cumin seeds
Chopped coriander leaves
Salt
Oil
For Batter:
1/2cup Gram flour
1/4cup Rice flour
1/2tsp Baking powder
1tsp Ginger garlic paste
1/4tsp Turmeric powder
1/2tsp Red chilly powder
Salt
Oil for deep frying
Heat enough oil,let crack the mustard seeds, cumin seeds.
Immediately add the chopped onions, grated ginger and chopped green chillies,sauté everything for few minutes until the onions turns transculent.
Add the chopped mushrooms and cook until they shrinks a bit.
Now add the cooked and mashed potatoes with salt to the cooking veggies,cook for few minutes.
Finally add the coriander leaves and put off the stove.
Heat the appe pan/paniyaram pan with enough oil.
Take all the ingredients give for batter in a bowl, add enough water and turn as a thick batter.
Make small balls from the prepared potato-mushroom mixture, dip gently in the batter.
Drop gently to the hot appe pan, cook in simmer.
Flip the vadas and cook on both sides until they gets well cooked.
Serve with spicy chutneys or sauces.

Wow! Making these in the appe pan is a neat idea. Nice way to sneak in mushrooms here.
Adding mushrooms along with potatoes is a great idea Priya. And the paniyaram pan is a nice way to avoid deep frying. Even I did the same with today's recipe.
Wow! Love the idea of making it in appe pan! Must do it next time, deep frying literally gives me a heart ache... hehe... Like the idea of hiding the mushrooms, but unfortunately my elder one is another hater of mushroom and gets it how much ever I sneak it in... :/

After Gayathri now yours appe pan recipe. Looks like I am not using mine fully. fritters came out great and perfectly cooked on every corner. Adding mushroom makes it super power pack snack.
My goodness, that's a perfect way to make the kiddos eat what they hate. Fritters are looking so great.
after making my first successful paniyaram a few days ago, I am ready to embrace all the uses of the pan and these look so good
Priya, whatever theme you are on dot with a recipe for it! I think I will check the recipes for myself with you before giving up making them..these sound excellent..
That is a brilliant idea Priya! We don't eat mushrooms but my boys love it. I will make this sometime for them.
