Zucchini Tikkis/Zucchini Cakes

Vegetables, whenever we feel like feeding our kids with veggies, most of the kids refuses to take them easily without any fuss. Fussy eaters are seriously very difficult to handle and everyday each mom struggles in their own way to feed their kiddos. Even i crossed all these situations,fortunately i always followed few tricks and tips to include veggies everyday in my kids diets. Now they are grown up, intaking veggies in their diet is quite a routine now. Most of my cooking involves vegetables though we are meatoholic. We get fresh vegetables every week from our farmer's markets without any fail. Some vegetables are seriously versatile and you can make some fabulous fusion dishes with them. My most favourite zero calorie vegetable is always Zucchini. Zucchini is quite an interesting vegetable to dish out any sort of dishes/bakes/cakes with them.

Zucchini Tikkis, Zucchini Cakes

Zucchini, this vegetable is easily available for me and which is very much cheap here. Obviously i dont forget to add them in most of my dishes. Make it as stir fry, kootu, sambar, pulao,cakes or breads, this vegetable works awesome in any cuisine. Zucchini replace very well local Indian vegetables in many dishes, i have already posted many Indian style dishes with this incredible vegetable. Hence am adding one more dish to this list, here comes an another easy breezy Indian style cakes or tikkis. This tikkis is almost like the popular aloo tikkis but with a twist, yes this tikkis calls for grated zucchinis along with mashed potatoes, which calls for usual spice mix and ingredients.These tikkis are going to week's blogging marathon, the theme for this week's theme is Kid's Delight - Veggies sneaked in.

Zucchini Potato Cutlets, Zucchini Tikkis

4nos Potatoes (pressure cooked)
1/2cup Grated zucchini
1/2tsp Green chillies (chopped)
1/2tsp Garam masala powder
1/4tsp Roasted cumin powder
2tbsp Chopped coriander leaves
Salt
1tbsp Corn flour
Oil for shallow frying

Mash the cooked potatoes well and take in a bowl.

Squeeze the grated zucchini well to remove the excess of water. Keep aside.

Add in the garam masala powder, chopped green chillies, chopped coriander leaves, grated zucchini,roasted cumin powder, corn flour, salt and mix well.

Zucchini Tikkis

Make small sized tikkis from the mixture. Keep the tikkis in fridge for half an hour.

I used grated zucchini directly without cooking them, if you want dont forget to saute them before adding to the mashed potatoes.

Heat enough oil in a pan, shallow fry the tikkis until they turns golden brown.

Serve this tikkis with your favourite sauce or chutneys.

You are a genius Priya. Adding zucchini to tikkis along with potato is a very innovative idea. My son is zucchini phobic and I am definitely going to try your recipe for him.

I am sure that the potatoes will help in masking the zucchini in the tikkis. That is a wonderful idea to sneak in zucchini. The tikkis looks so yum.

Those tikkis look so tasty... I am coming with my cup of chai to have this! What a way to sneak in something like zucchini which always invites dirty looks from kids... hhe...

zucchini cakes or tikkis surely taste awesome. I love this veggie since the time I tried paratha with that. these tikkis makes a great snack or part appetizer.
