Varagu Arisi Upma Kozhukattai/Kodomillet & Black-eyed Peas Steamed Dumplings

Upma Kozhukattai is a healthy, filling and satisfying South Indian breakfast, which is also enjoyed as a mid-day snacks, tiffin items to serve with some spicy coconut chutney. This steamed dumplings is prepared usually with rice rava or else with rice flour. And this steamed dish is also called as Kara pidikozhukattais as well. I love to replicate some traditional South Indian dishes with some healthy stuffs in it. Hence i opted for a millet dumplings aka gluten free upma kozhukattai. This is quite a healthy version of steamed dumplings which is seriously loaded with protein rich black-eyed peas beans. Obviously you cant miss this incredible protein rich to try if you are looking for a super healthy dinner or breakfast for week days.

Vegetable Barnyard Millet Upma/Kuthiravali Upma

Millets have their important place in our weekly menu. I have been cooking with this healthy millets often as these grains are extremely versatile to cook with.Though i have cooked varieties of foods with millets, am yet to cook some dishes out of it. My today's recipe calls for barnyard millet aka kuthiravali, which is extremely nutritious and super versatime to cook many dishes out of it. Today am sharing an easy breezy dish which calls for a simple cooking process. With couple of vegetables and barnyard millet, you can prepare this healthy one pot meal with less efforts.

Barnyard Millet Sweet Pongal/Kuthiravali Sakkarai Pongal

Millets, this healthy small grains are excellent to cook varieties of dishes with it. These grains are seriously versatile and you can dish out many droolworthy foods. From desserts to main dishes, millets works awesome. I have tried couple of dishes with millets though i have many to cook. Sweet pongal is my all time favourite, usually rice and dal cooked together along with cardamom,sugar or jaggery syrup tempered with ghee and cashew nuts makes this ultimate sweet dish. Pongal is one of the popular harvest festival celebrated in Tamilnadu. Sweet pongal is a neivedhyam offered to Sun god during this auspicious day. Since i want to give a healthy twist to this usual sweet pongal, i prepared this ultimate dish with Barnyard millet aka Kuthiravali.

Kuthiravali Kanji/Barnyard Millet Porridge

If you are searching for a easy breezy, quick, healthy and definitely a satisfy breakfast for a hurry morning, then you should take a look at this easy porridge. Kuthiravali/Barnyard millet is one among my favourite millet which i never forget to get from India, and i have few packets in my pantry to make delicious foods out of it. If you are my regular reader you might know that am not a breakfast person, obviously i try to skip breakfast but since we started our low carb diet, i couldnt skip the breakfast and trying to take millet based foods in the morning. One of my favourite breakfast or else brunch is this barnyard millet porridge.

Pearl Millet Meethi Seviyan/Pearl Millet Sweet Vermicelli

Meethi Seviyan is an Indian dessert made during festival days, seviyan means vermicelli and Meetha/Meethi/Mithi means sweet hence the name of the dish 'Meetha Seviyan'.Vermicelli, these thin hair like spaghetti used in Indian cuisine for making both savoury and sweet dishes. Sweet vermicelli makes an excellent dessert as well and the cooking process of this sweet goes for simple preparation. Well roasted vermicelli cooked with sugar syrup and topped with varieties of nuts. This sweet is made specially during the holy ramadan days.Coming to this Meetha seviyan, this sweet is prepared with both sugar and jaggery, i opted for jaggery. We loved it to the core and the jaggery syrup added to make this sweet gives an incredible taste and colour to this simple sweet.

Samai Semiya Kheer/Little Millet Vermicelli Kheer

During my last trip to India, i was surprised to see the varieties of vermicelli available in stores, especially different millet based vermicellis. Actually i can see many peoples even in our family started replacing the rice with millets now. Coming to my today's recipe, this little millet vermicelli kheer is quite a rich,creamy and very delightful dessert or a prasadam for a Pooja or as a sweet to serve after a meal for a special occasion. Since this little millet vermicelli are quite thin, the cooking process goes for a quick,easy and less time. I prepared this little millet vermicelli kheer for Ayudha pooja's celebration, obviously a healthy prasadam to enjoy the goodness of this millets.

Pearl Millet,Sprouted Green Gram Kuzhi Paniyaram

One of my recent trial with pearl millet aka Kambu is this fantastic nutritious kuzhi paniyaram, to make this dish more interesting i opted for sprouted green grams. Both make this dish more healthy and obviously delicious. Anybody can have this dish with their favourite side dish depending upon their tastebuds. I prepared this batter to try idlis out of it, suddenly i changed my mind and went for making these tiny dumplings using appam pan. These paniyaram aka dumplings came out extremely prefect and makes an excellent breakfast or snacks.

Barnyard Millet & Sprouted Greengram Pongal/Kuthiraivaali Ven Pongal

Cooking with millets became one of my favourite culinary experiments which i never ever want to give up for any sake.Actually am trying to add various millets which i carried all the way from India whenever i feel like feeding millets instead of rice to everyone at home. I have  tried various dishes with different millets and my small family started loving these healthy dishes. One of my recent trial with Barnyard millet aka Kuthiraivaali or Kuthiravalli is this super healthy,protein packed pongal. Pongal is a south Indian breakfast dish which is prepared simply by cooking both rice and yellow moongdal together, this dish sounds almost like North Indian kichadi eventhough the tempering part of this South Indian pongal goes for nuts and different spices than the usual tempering spices. Usually Pongal can be eaten for breakfast or for dinner, however i'll like to pack them even for lunch whenever i feel lazy to cook.

Eggless Ragi Carrot Cashew Cake/Eggless Fingermillet Cake with Palm Jaggery Syrup

I love cooking with millets, and my pantry will always have varieties of millets, millet flour etc. Its always a pleasure for me to add these nutritious wholegrains in our diet without changing anything in my usual way of cooking. Usually i'll replace half of the wheat flour in our chappathis with ragi aka fingermillet flour or with pearlmillet flour aka bajra flour. The same thing happens even with South Indian breakfasts like Idlies, dosas, pongal, upma etc. I keep on trying adding millets just to feed my family members with healthy stuffs in their daily menu. When its comes to baking with millets, i have been trying few combinations in breads, cakes since ever i started adding millets in our diet. Ragi flour works awesome in breads and cakes, many of my trials with this flour have turned out simply awesome  When you get a chance to bake a cake with carrots, nuts,ragi flour and jaggery syrup who will miss the chance, definitely not me. Today's cake is baked completely with healthy stuffs in it, its butterless sugarless and with ragi flour.Sounds interesting rite??..

Pearl Millet Dhokla/Kambu Dhokla/Bajra Dhokla

After a light, airy and delicious cornmeal dhokla, now am taking you all to a nutritious dhoklas, yes this dhokla is completely a different one from those varieties of dhoklas you would have crossed in your life. Actually i must say that i always want to add millets in our diet and while preparing a simple usual dhokla batter for our dinner, i asked myself why dont you give a try to a different dhokla with the millets and hence i tried adding the pearl millet flour sitting in my pantry. Initially i wasnt sure about the taste and texture, however since i love to take risk in my life i was very much tempted to give a try to this pearl millet dhokla. I kept my fingers crossed until i removed the cooked dhokla from the cooker. When i sliced the dhokla, i was astonished to see the fluffiness and light texture of this millet dhokla. This dhokla tastes simply awesome as i went for usual spices as i do with my usual instant gram flour dhokla.

Ragi Malt/Healthy Fingermillet Porridge

Am not a breakfast person, so obviously i skip it, but somehow after reading so many articles about the importance of taking breakfast now am trying to have atleast something for the sake of having breakfast. Just a coffee with a slice of bread is enough for me, sometimes i'll make oats porridge or ragi malt which will be very filling when compared to coffee and bread slice.Ragi malt can be prepared in a jiffy and this filling nutritious drink keeps your tummy filled until lunch. Ragi malt can be prepared in two ways, sweet and savory. My today's post is sweet ragi malt. Unless like Ragi koozh, this malt is prepared simply with ragi flour,milk and sugar or honey,yes just with simple ingredients your breakfast is ready to have.

Mixed Millets & Brown Rice Kuzhi Paniyaram /Siruthaaniya Kaara Paniyaram

If you have very tiny quantity of varieties of millets left aside in your pantry and dont know how to finish them, just look at this beauties, am sure they will definitely makes an excellent evening snacks. These paniyarams are more filling,nutritious, satisfying and healthy as well. After making couple of dishes with millets like barnyard millet, kodomillet, foxtail millet,little millet, finger millets,there were some leftovers sitting in my pantry since a while, those millets pulled me to try this interesting combination and trust me you will leave aside some millets just to make this kuzhi paniyarams. Kids love this paniyaram, this finger food can be easily served with anything as side dish, my lil one love his paniyaram without any side dish if they are tempered and spiced with green chillies. Barnyard Millet & Black Urad Dal Sponge Dosa/Kuthiravali Karuppu Ulundhu Dosai

Millets took an important place in our daily menu, actually am cooking with them atleast once a day. If our breakfast or lunch is prepared with rice, our dinner will be definitely something with millets and vice versa. But however i like to take millets specially for our breakfasts.Millets are excellent for the health and they are more healthier than rice, millets are very much versatile as like other whole grains. After making a couple of dishes with barnyard millets, i tried recently this spongy dosas for our dinner. This batter goes for barnyard millet and black whole urad dal, yes black urad dal are healthier as much as millets. Milagu Jeeraga Kambu Sevai/Cumin, Peppered Pearlmillet Vermicelli

If you ask me to make a quick tiffin,i'll definitely go for a simple milagu jeeraga sevai aka cumin and pepper flavoured rice noodles. Its my all time favourite, whenever i want a quick tiffin i'll make immediately this simple, delicious dish with store bought sevai. But this time for a change, i tried the same milagu,jeeraga sevai with finger millet vermicelli/noodles. If you are my follower i have already told that i came home with few packets of different millets sevais from India. I just started experimenting with those sevais,one of my recent trial with kambu sevai is this easy peasy cumin and pepper flavoured sevai. Kuthiravali Venpongal/Barnyard Millet Pongal

Every South Indian home will definitely prepare ven pongal atleast once a week, pongal is prepared always with  rice and moongdal, later we usually spice them with peppercorns,curryleaves,cumin seeds and cashew nuts fried in ghee or oil. Been born and brought up in South India, pongal is one of the my most favourite breakfast before few years,but i cant eat this food now for my breakfast coz i completely lost the habit of having South Indian breakfast dishes. Blame the Paris's weather or my laziness, watever its been ages i stopped making pongal for our breakfast.If we crave for this beautiful dish, i'll definitely make it for our dinner, obviously most of the South Indian breakfast dishes are now turned as our evening dinner.

Little Millet Kheer/Samai Payasam

Little millet belongs to the famous millet family, as i told earlier millets can be used in everyday life and they are very versatile. You can make many dishes like upma, dosa,idli, vadas, murukkus, pongal,khichdi, biriyani etc. Little millet can be cooked as much as like rice, yes they can be steam cooked or pressure cooked. Actually little millet are also known as small millet and they are commonly cultivated in Southern parts of India,they will be small in size and gluten free. They contains nutrients like Zinc, magnesium, vitamins,potassium,folic acids, iron and calcium.I love cooking with millets, obviously millets have their important place in our weekly menu. Ragi Semiya Upma/Fingermillet Vermicelli Upma

Upma is one of the easiest and quickest breakfast South Indian dish usually prepared with semolina or rice rava. But this time am posting today this healthy upma with fingermillet vermicelli. Actually during my last trip, i crossed many different and healthy vermicelli with many varieties of millets, obviously i came back home with a couple of millet vermicellis. One among is this ragi semiya aka finger millet vermicelli, actually i make this upma quite often whenever i feel like having semiya upma and completely trying to skip the usual vermicelli. This semiya upma is definitely nutritious and healthy as it is made with ragi aka fingermillet. Ragi Masala Dosa/Fingermillet Masala Dosa

I always go on searching for a different dish when its comes to nutritious millets in our daily, after cooking with pearl millet i landed towards the another nutritious millet aka grain called Fingermillet. I crossed this masala dosa recipe in a magazine, immediately i took a paper cut and this paper cut was sitting sadly along with my other paper cuts since a long. During my stay in India, i have send few parcels with many grains to cook later here in Paris. Obviously one among the grains i have send is this, fantastic protein rich nutritious fingermillets. This dosa goes for fingermillet wholegrains but not the fingermillet flour, and the batter goes for fermentation. I strictly advise not to use the already prepared fingermillet flour for making this dosas.

This dosa is an instant version, needless to say that this dosa batter need to be prepared a day before in case if you are planning this healthy crispy dosas either for your breakfast or for your dinner.This dosa came out extremely crispy and i went for a simple potato masala for stuffing this crispy dosas. This potato masala stuffed dosa turned out dinner simply delicious. With a simple side dish, am sure you will definitely have a satisfying meal.This post goes  for the CC Challenge of the month.

Thalicha Kambu Idli/Tempered Pearlmillet Idli

Pearlmillet / Bajra is one of the nutritious and the oldest millet used by our ancestors, its highly rich in fiber content which makes it more healthier. This millet is used as a regular meal in some regions of India. Its really very much advised to include this fibre rich millets quite often in our regular diet.Eating often pearlmillet provides us plenty of fibre,iron,magnesium,copper,zinc, vitamine E and B Complex, thiamine, riboflavin and niacin. Its a gluten free grain, which can be easily included in a diet of a person who have allergy towards gluten.This grain is also highly effective and recommended for people who suffers from constipation and stomach ulcers.Obviously this grain is very much good for diabetics to keep their glucose levels normal.

Dunno how to add this incredible grain is your diet, just make our South Indian dishes like idlies,dosas and pongal with it. I do quite often idlies or dosas, but for a change i went for a tempered pearlmillet idli which sounds almost like Kanchipuram Idlies.
