Cheesy Zucchini, Tomato & Bellpepper Schiacciata

The word Schiacciata may sounds funny or hard to pronounce but its a yeasted flat bread mostly stuffed with a savoury filling or else simply with a sweet filling even sometimes without filling. Almost like Calzone or focaccia, this Italian flatbread is quite known as Classic Tuscan Flatbread.Schiacciata goes for simple ingredients and the main basic ingredients are flour,yeast and water. You can add other ingredients like olive oil,herbs depending upon ur wish. This flat bread is eaten every day as mid morning snacks, or for lunch or for dinner. But some may also have this flat bread during mid afternoon snack. If this bread goes for filling you doesnt need anything to add with, if its simply prepared as flat bread, just stuff it as you desire with vegetables,meats or simply with salads and have it as sandwiches.



I prepared my Schiacciata as a savoury one with an interesting and vegetable loaded stuffed flat bread. Yes my stuffing goes for zucchini,tomato,bellpepper and emmental cheese which i spiced simply with pepper powder, garam masala powder and salt. Yes its a complete Fusion with Indian spices in it. The cheese gives an excellent texture while having this savory schiacciata warm. We loved it thoroughly, this Indianized but still a Fusin Schiacciata is this week's challenge for baking group called Fondbites, Bake Along by Subhashini, every week on monday,a baking dish will be challenged to the members of this baking group and we need to post before the next sunday. seriously am enjoying the member's bakes virtually.


2cups All purpose flour
3/4cup Luke warm water
1tsp Dry instant yeast
1tbsp Sugar
1/2tsp Salt
3tbsp Olive oil (for kneading)
1tbsp Olive oil (for basting)
3tbsp Milk (for brushing)

Filling:
1no Tomato (chopped thinly)
1no Small green capsicum (sliced thinly)
1/2no Zucchini (halved and sliced thinly)
1/2tsp Salt
1/2tsp Garam masala powder
1/4tsp Pepper powder
1/2cup Grated emmental cheese

Take the sugar, salt, flour,yeast, warm water in a bowl. Knead everything well, add gradually the olive oil for kneading.

Knead well for few minutes until you get a soft and smooth dough.

Arrange the dough in a greased bowl,keep aside for an hour in warm place.

Once the dough doubled the volume, punch the dough and knead again.

Divide the dough as 4 equal balls,dust the balls and roll each as 1/4of an inch thickness, transfer the rolled dough to a baking sheet lined over a baking tray.

Meanwhile mix the filling except the cheese.

Spread the filling generouly over two rolled disc, sprinkle the cheese.

Brush the edges with the milk,top it with an another rolled disc. Seal well the edges with your fingers, and seal it completely with a fork and poke on the top.

Brush the top with milk.

Let it sit again in a warm place for 20minutes.

Preheat the oven to 350F, bake for 20-25minutes until the crust turns golden brown.

Brush the baked schiacciata generously with the olive oil, once its comes out of the oven.

Transfer the baked schiacciata to a wire rack, let it turns warm.

Slice it and eat warm.

nice stuffed bread.. I had this when I was in Italy couple of years back and almost forgotten about it.. after seeing the post the name ringed bell in me .. yummy Schiacciata
