Eggless Speculoos Ice Cream/No Churn Eggless Speculoos Icecream

During our recent  monthly shopping, i couldnt resist myself to grab a bottle of speculoos spread, these spread makes an excellent breakfast when served along with brioche bread slices. Actually Speculoos is a spiced shortcrust biscuits traditionally baked in Netherlands , Belgium and in Germany during Christmas festival. Speculoos is prepared with handful of spices like cinnamon,nutmeg, cloves, cardamom and white pepper. This spiced speculoos biscuits makes an excellent pair when served with coffee for evening snacks. We love speculoos very much and needless to say this speculoos spread is very much liked as much as like Nutella spread at home. Obviously whenever i see this spread i dont forget to grab it.Speculoos is also known as Biscoff spread.

Eggless speculoos icecream without icecream Maker
Back home after few days, i was planning for making an icecream without an icecream maker, while going through few of my paper cutting from French magazine,this icecream with speculoos caught my eyes, obviously i tried immediately to please my kids. Since we had a nasty rainy summer during the whole months of July and August, suddenly its too hot now in september however we are enjoying this drastic climate change with homemade juices, shakes and icecreams. The original recipe went for eggs, which i simply replaced with sweetened condensed milk else i followed the recipe exactly as like the original recipe went for.This icecream doesnt go for any special gadgets,just a beater and blender is enough to make this creamy,delicious icecream. Yes this icecream is made at home simply without the famous icecream maker.This post goes to CC Challenge of the month.

Speculoos Icecream, Eggless Speculoos icecream without icecream maker


1cup Speculoos spread
A pinch  Fine sea salt
1tsp Vanilla extract
2cups Sweetened condensed milk
1cup Heavy whipping cream
1cup  Speculoos cookies (crushed)

Beat the Speculoos spread,salt, and vanilla until smooth with a hand beater

Add a cup of condensed milk and the cream and whisk on low speed until everything gets well mixed.

Add the rest of condensed milk and the cream and continue mixing.

Cover and arrange in freezer for an hour.

Take the mixture in a blender and beat well for few minutes,fold in the crushed cookies,pour it again in a stainless steel box and keep in freezer for overnite.

While serving, keep the box in room temperature for few minutes.

Scoop the icecream and enjoy.

I would always have speculoos when I visited my family in Holland. This ice cream looks so amazing. wish I could have some now as it has been so warm today after we thought summer was over. Mother Nature had other ideas
