Vegan Mint Vegetable Pulao

Weekend lunch or dinner have their important place in our menu, yes weekend is always special especially when Hubby dear is at home. Coz he works two weekends in a month, obviously if he is at home, i'll plan to make his favourite lunch or dinner. He just love vegetable pulao very much with chicken fry. Since i dont want to make the usual vegetable pulao, this time i tried my hands with this aromatic pulao prepared simply with a spiced mint paste. The addition of this mint paste makes this pulao more interesting and flavourful. A simple one pot meal to make if you have mint leaves abundantly at home. Give a try to this pulao am sure you will definitely love it.

Usually i'll make my pulaos through pressure cooker,but this time for a change i prepared them with heavy bottomed vessel and this method works out wonder too.If you love paneer,you can add them too,also if you like tofu cubes,just go on. Actually this pulao makes an excellent dinner as well. Yes, a prefect weekend dinner when served along with some spicy chicken fry or else with fryums. Try this pulao for your weekend lunch or dinner, as this dish is definitely an easiest one. Vegan Mint Vegetable Pulao

2 cups Basmati rice soaked for 30 minutes
2+1/2cups Mixed veggies ( chopped cauliflower, carrots, potatoes)
1no Onion(sliced)
1cup Mint leaves
5no Garlic cloves
2nos  Green chilies
1/2tsp Red chilly powder
1tsp Garam masala powder
4cups Water
3 tbsp Oil
Salt

For tempering:
1tsp Cumin seeds
1no Bay leaf
2-3nos Cloves
2nos Cardamoms
1 inch cinnamon

Heat oil and fry all the whole spices until they turns brown.

Add the onions and cook until they turns transculent,meanwhile grind the mint leaves with garlic cloves and green chillies as bit coarse paste.

Add all the veggies,red chilly powder,garam masala powder and saute again for few minutes on a low flame.

Now add the grounded paste, saute for few minutes.

Add the rice and saute for 2 minutes on a low flame.

Now add the water, salt and cook everything in medium high flame for few minutes and finish the cooking with low flame until the rice gets well cooked.

Serve warm with your favourite raita.
