Eggless Black Poppyseeds & Lemon Cookies

If you have already baked with black poppyseeds and lemon as cake, am sure you will definitely enjoy thoroughly these cookies as well. I tried my hands to bake some cookies with this both incredible ingredients and these cookies came out extremely fabulous and dangerously addictive. I went with an eggless sugar cookie dough, which works awesome for baking these cuties. Butter is a must for making this cookies, however am sure these cookies will definitely please your sweet tooth. Very easy to make, you can munch these cookies during anytime of the day. And the addition of lemon zest and lemon juice in this cookies gives an excellent flavor to this poppyseed loaded cookies.

Black poppyseeds Lemon Cookies

These cookies are going to be a part of this month's Bake-a-thon, a baking event am running for this whole month during thrice a week. If you dont have black poppy seeds, you can bake the same cookies with just lemon zest as well, dont forget to give a try with orange zest too. However this cookies if conserved properly can stay prefect for more than a week. But trust me, these cookies are dangerously addictive and they wont stay for a long as you wont keep yourself away from these cookies.

Eggless Black Poppyseeds Lemon Cookies

2tbsp Black poppyseeds
2tbsp Lemon zest
3/4cup Butter
1cup Icing Sugar
2tbsp Lemon juice
1tsp Vanilla extract
2+1/2 cups All-purpose flour
1/2tsp Salt

Line up a baking tray with baking sheet and keep aside.

Pre-heat oven to 350F. Sift together flour and salt and keep aside.

Add butter and icing sugar together in the bowl of your electric beater. Beat on medium speed until the mixture becomes creamy.

Add the milk, vanilla extract, black poppyseeds, lemon zest and beat again until combined.Now add the flour and beat on slow speed until flour gets well mixed.

Do not over beat. Use your hands to bring the dough together. Wrap it and keep in fridge for one hour.

Dust a rolling surface with enough flour, roll the cookie dough and using a cookie cutter, cut the dough as any shape as you desire.

Transfer the cookies in a lined baking tray.

Bake the cookies for 10 -15 minutes in middle rack.

Let them cook completely on the tray before you remove the cookies.

Enjoy.
