Double Chocolate Beets Muffins

If you ask me to pack something to munch while travelling especially for kids, i will make sure to bake some muffins. Muffins are very easy to pack and ready to enjoy at anytime of the day. A prefect travel food for kids. From breakfast to dinner, muffins can replace very much a meal if they are baked with healthy ingredients in it. My today's recipe is an excellent baked goodies to pack if you are planning for a travel with your family. Since we are chocoholic peoples, i cant think more than baking some chocolate loaded muffins as i picked Kid's delight - Travel food as theme for this week's blogging marathon.

Double chocolate Muffins, Double chocolate beets muffins

Coming to today's kid's friendly muffins, its completely butterfree but not eggfree. Very easy to bake, these muffins are seriously addictive as they are loaded with chocolates. If its comes to double chocolate, i dont forget to add roughly chopped chocolate chunks than chocolate chips. Adding chocolate chunks makes a simple muffin more chocolatey. Especially those melted chocolate chunks tastes amazingly delicious if you enjoy these muffins when they are still warm. A prefect baked goodies to carry wherever you go with your kids.

Double Chocolate Beets Muffins

1cup Whole wheat flour
1/4cup Dark cocoa powder
1/2cup Chocolate chunks (roughly chopped)
1/2cup Sugar
2tsp Baking powder
1/4cup Wheat bran
1/2cup Beet root puree
1 Large egg
1/2cup Milk
1/4cup Oil
1tsp Vanilla extract

Preheat the oven to 350F, line a baking tray with muffins moulds or paper muffin moulds.

In a bowl, sift the flour,dark cocoa powder,chocolate chunks,baking powder, and salt.

Meanwhile in a small bowl whisk together the sugar, milk, beets puree, oil, egg and vanilla extract.

Pour the wet ingredients to the dry ingredients, whisk lightly. Dont overmix the batter.

Spoon the batter evenly to the already prepared pan.

Bake for 20-25 minutes until a skewer inserted comes out clean.

Butterless Double Chocolate Muffins

Carefully remove the muffins from the tray, cool completely.

Enjoy with your favourite drink.

Oh yes these muffins would make such great travel food . With the list of ingredients you have they make such a healthy bake and I like your set up , with playing cards . Looks fantastic .
