Eggless Chocolate Almond Streusel Cake

The word streusel itself makes me drool , its been ages i prepared streusel cake. Actually Streusel is a crumbled topping made usually with flour,butter, sugar often topped over a bread, muffins,pies or simply in cakes. Now some of the streusel topping includes spice powders, nuts and even chocolate powder.The word Streusel derives from German which means something scattered or sprinkled.My today's streusel cake is this week's challenge of an incredible baking group called Fondbites, Bake Along by Subhashini, every week on monday,a baking dish will be challenged to the members of this baking group and we need to post before the next sunday. seriously am enjoying the member's bakes virtually.

This cake is a very rich,softy and seriously very spongy cake prepared with a simple and nutty chocolate almond streusel toppings. Actually the cake recipe shared by Subhashini goes for 4 eggs and butter, which i replaced simply with sweetened condensed milk, mascarpone cheese and sour cream and i baked this cake as eggless and completely butterfree. Obviously i have made few minor changes according to my tastebuds by skipping the spice powders in streusel topping with vanilla extract and cocoa powder also i replaced the melted butter in streusel topping with cooking oil. I was bit skeptical about the texture of this cake but trust me they came out absolutely prefect and the picture itself speaks a lot na. Trust me you wont miss the eggs and butter in this cake definitely.


For chocolate almond streusel topping:
1/2cup All purpose flour
3/4cup Oil 
1/4cup Cocoa powder (unsweetened)
1cup Sugar
1tsp Vanilla extract
1cup Sliced Almonds

Mix the all purpose flour,cocoa powder, sugae in a bowl, slowly add the oil,vanilla extract and mix until everything gets well mixed, add finally the sliced almonds, give a mix.

Cover the bowl and keep aside.

For Cake:
2+1/2cups All purpose flour
1/2cup Sugar
1/2tsp Baking soda
1tsp Vanilla extract
2tsp Baking powder
1cup Sweetened condensed milk
1/2cup Mascarpone cheese
1+1/4cup Sour cream

(If you dont get sourcream, mix 1+1/4cup fresh cream with a tablespoon of vinegar or lemon juice, set aside for 5 minutes and use in place of sour cream)

Preheat the oven to 350F, grease a large bundt pan generously.

Sift the flour,baking powder,baking soda and salt together,keep aside.

Beat the sweetened condensed milk, mascarpone cheese,sour cream with sugar until the sugar gets well dissolved.

Add now the vanilla extract, beat again.

Now slowly add the dry ingredients to the wet ingredients and mix with a spatula, dont overmix.

Pour half of the batter to the prepared bundt pan, then sprinkle half of the streusel topping generously.

Top it again with the remaining batter, sprinkle the remaining topping.

Bake in medium rack for 30-35minutes until the skewer inserted comes out clean.

Remove the pan and let it cool completely on a wire rack.

Slice the cake and enjoy.

Notes:
Subhashini went for a glaze which i skipped here, if you want to present your cake with a icing sugar glaze just mix 1cup icing sugar with 2 teaspoons of milk. 

Once the cake is completely cool, pour this glaze on the top of the cake, do this glaze if you are using bundt pan.
