Vegetable Mini Pie

Pie is one of our favourite dish especially if its loaded with cheese, if pies are made with store bought puff pastry sheet, trust me you get some flaky, buttery, crispy pies to enjoy without any fuss. When i planned some savoury pies for our lazy weekend brunch, i immediately wanted to make some flaky pies. Obviously i prepared some mini pies with a simple spiced mixed vegetable masala topped with some cheese as we love cheesy pies. Its really easy to prepare, this pies takes hardly less than half an hour to prepare and bake. If you have storebought puff pastry sheets in your fridge or freezer, you can bake these cuties very much easily than you can imagine.

Vegetable Mini Pie

Since am running this week's blogging with Holiday dishes as theme, after two different kid's friendly dishes my today's post goes for this flaky pies. As i told already, these pies are my kids favourite, they never get bored of having this pies and they just love it. Filled with vegetables or meat, these pies can be an excellent starter for a party menu or for a get together. Needless to say that you can make savoury pies out of anything. Give a try to these easiest pies and am sure this pies will definitely become your most favourite.

Mini Pie with cheese, Cheesy Vegetable Pie

3cup Mixed Vegetables (chopped finely)
2nos Onions (chopped finely)
1no Tomato (chopped finely)
1tsp Ginger garlic paste
1tsp Red chilli powder
1/2tsp Coriander powder
1/2tsp Cumin powder
salt
Oil
1cup Grated cheese
Puff pastry sheet (as per need)

Heat enough oil and fry the ginger garlic paste until they turns slightly brown, add the chopped onions and saute till transculent.

Add immediately the chopped tomato, salt and cooking until the tomatoes turns mushy.

Now add the chopped mixed vegetables, red chilli powder, cumin powder, coriander powder, cook for few minutes.

Add a cup of water and cook everything until the filling turns thick. Let this masala gets cool completely.

Vegetarian Mini Pie with cheese

Now using a cookie cutter, cut the puff pastry as small circles, handle them gently and place them in a muffin tray.

Drop enough masala, top it with cheese and bake for 15-18minutes until the crust turns golden brown.

Serve warm.

Love the idea of using puff pastry to make these mini pies. Vegetable fillings sounds yummy!!
