Sicily, one of our recent favourite island. Yes we had a fantastic summer vacation there and came back home with loads of beautiful memories. Do you know Sicily is quite popular for their citrus fruits and sun dried tomatoes. Obviously before leaving to Paris, we couldnt hesitate a second to grab some sun dried tomatoes and lemon liquor aka Limoncello with few more herbs which are quite famous in Sicily. Back home, i seriously waiting for a chance to give a try to one of the pasta dish we have tasted during our vacation. Though the pasta we had went for loads of cream and cheese, i went for the low fat version, but adding milk and parmesan cheese.
Kids goes crazy if their lunch box have pastas in it. Obviously this sundried tomatoes and rosemary loaded pasta will definitely please everyone's tastebuds. Since i picked Kid's delight-Lunch box as theme for this week's blogging marathon, i know i will be posting a lunch box friendly pasta dish to suit prefectly for this theme. Very easy to make, you can dish out this delicious pasta with less efforts, apart from chopping onions and sun dried tomatoes, this pasta makes an excellent lunch when served along with grilled meats or french fries.
3cups Cooked pasta
1no Onion (chopped)
1/2cup Sun dried tomatoes (chopped)
Parmesan cheese (as per need)
Heat the olive oil in a pan, add the chopped onions and saute until the onions turns transculent.
Now add the chopped sun dried tomatoes, cook for a while. Add the milk and bring everything to boil.
Finally add the cooked pasta, toss everything well and put off the stove.
Serve hot topped with parmesan cheese.
