Biriyani, this royal dish is everyone's favourite at home. Prepared usually with meats or else with seafoods, this dish is definitely a treat for many hence its usually prepared during festivals, marriages or else for a get together. For us, Sunday lunch calls almost for Biriyanis. Prepared usually in a large pots, biriyanis can be prepared very much easily in pressure cooker as well. My mom makes excellent pressure cooker biriyanis and we love it to the core. Its been a while i prepared pressure cooker friendly chicken biriyani and few days back when i was alone at home i couldnt resist to prepare this easy breezy chicken biriyani as i was craving for some biriyanis.
Coming to this simple biriyani, you doesnt need to marinate chicken pieces as we do always for usual biriyani preparation. However trust me, this chicken biriyani tastes very much delicious. With simple cooking process and easy pressure cooking, you can make this biriyani even in large quantity. Yoghurt plays an important role in this dish as usually curd/yoghurt used while marinating to turn the meat pieces tender. If you feel lazy to cook an elaborate biriyani, just give a try to this easy chicken biriyani with less efforts. Trust me this dish is a prefect sunday meal to dish out if you are alone and feel like having biriyani for your lunch. 2cup Basmati rice
1/4kg Chicken (cut as medium pieces)
2nos Onions (sliced thinly)
4nos Tomatoes (chopped)
3nos Green chillies (slit opened)
2nos Whole spices (bayleaves, cloves,cinnamon sticks,cardamoms,star anise)
1tsp Chilly powder
2tsp Ginger garlic paste
1tsp Garam masala powder
1cup Thick Yoghurt
1/4cup Oil
1/2cup Mint leaves (chopped)
1tsp Lemon juice
Salt
Heat the oil in a pressure cooker, fry the whole spices. Add the onions. ginger garlic paste, cook everything until the raw smell goes away.
Add the tomatoes,chopped mint leaves and cook until the tomatoes turns mushy.
Add the marinated chicken pieces,salt,the slit opened green chillies, chilly powder, garam masala powder and saute everything for a while.
Add the thick yoghurt, cook for a while, meanwhile wash the basmati rice and drain the excess of water in a strainer.
Add the two cups of water and bring everything to boil.
Now add the washed rice, close the pressure cooker with lid, cook in high flame.
After 2 whistles, put off the pressure cooker.
Once the pressure gets released, add the mint leaves and drizzle some lemon juice.
Serve hot.

I love adding yougurt or buttermilk in my quick biryanis. The biryani looks so flavorful and inviting.
