Cheese Potato Calzone

Calzone, this popular Italian oven baked folded pizza which is well known all around the world, as this folded pizza are very easy to make. I have already baked couple of calzone with different stuffing. However my today's post goes for a different and dangerously delicious calzone which is simply stuffed with a herbed and spiced potato chunks. The stuffing calls for a super simple preparation. Yes cooked and mildly mashed potatoes when spiced with some chilly flakes,salt, olive oil and chopped parsley leaves is quite enough to prepare the filling. No sauteeing is needed. If you are searching for a super filling lunch or dinner to serve and feed easily your family dont forget to give a try to this fantastic calzone.

Cheese Potato Calzone

This pocket pizza can be prepared at anytime of the day and they were quite filling when served along with a bowl of warm soup or with some vegetable salads. Usually i prepare calzone with meats and veggies filling along with grated cheese, this time i skipped the meats and prepared simply with a simple potato filling and cheese. You can make mini calzones using the same stuffing for a party menu,why not for a snacks..You have so many choices to make filling and enjoy these delicious calzones without any guilt. These calzones are going to Bake-a-thon, a fabulous baking event am running for this whole month, thrice a week.

Cheese Potato Calzone, Potato Calzone

For Dough:
3cups All purpose flour
3/4cup Luke warm water
1tsp Dry instant yeast
1tbsp Sugar
1/2tsp Salt
3tbsp Olive oil (for kneading)
Olive oil for brushing

For Stuffing:
2cups Cooked potatoes (mashed slightly)
2tbsp Chopped parsley leaves
1tbsp Olive oil
Salt
Chilly flakes
1cup Grated cheese

Take the sugar, salt, flour,yeast, warm water in a bowl. Knead everything well, add gradually the olive oil for kneading.

Knead well for few minutes until you get a soft and smooth dough.

Arrange the dough in a greased bowl,keep aside for an hour in warm place.

Once the dough doubled the volume, punch the dough and knead again.

Divide the dough as 4 equal balls,dust the balls and roll each as 1/4of an inch thickness, transfer the rolled dough to a baking sheet lined over a baking tray.

Meanwhile mix the cooked potatoes,chopped parsley leaves, olive oil, salt and chilly flakes in a bowl, keep aside.

Fill the rolled dough with enough filling,  sprinkle the cheese on the top.

Brush the edges with the milk,fold it as half moon. Seal well the edges with your fingers, and seal it completely with a fork.

Brush the top with milk. Let it sit again in a warm place for 20minutes.

Preheat the oven to 350F, bake for 20-25minutes until the crust turns golden brown.

Brush the baked calzone generously with the olive oil, once its comes out of the oven.

Enjoy warm.
