Vegetable Barnyard Millet Upma/Kuthiravali Upma

Millets have their important place in our weekly menu. I have been cooking with this healthy millets often as these grains are extremely versatile to cook with.Though i have cooked varieties of foods with millets, am yet to cook some dishes out of it. My today's recipe calls for barnyard millet aka kuthiravali, which is extremely nutritious and super versatime to cook many dishes out of it. Today am sharing an easy breezy dish which calls for a simple cooking process. With couple of vegetables and barnyard millet, you can prepare this healthy one pot meal with less efforts.

Vegetable Barnyard Millet Upma


Am running second week of blogging marathon with an interesting theme, the theme for this week's marathon is Cooking for one, obviously am gonna share easy dishes during this week. Actually, to cook for a person asks for easy cooking process. Today's recipe calls for a pan, obviously this upma is a one pot meal which is definitely a quick dish to prepare. Served along with a simple chutney, trust me this upma is definitely a healthy breakfast or dinner to enjoy without any fuss.

Kuthiravali Upma with vegetables


1/2cup Barnyard millet/Kuthiravali
1no Onion (big & sliced)
3nos Green chillies (slit opened)
1/4cup Carrot (chopped)
1/4cup Potato (chopped)
1/4cup Cauliflower florets
1/4cup Green beans (chopped)
1tsp Mustard seeds+urad dal
1tsp Channadal
1/4tsp Asafoetida powder
Few curry leaves
1/4tsp Ginger (grated)
Oil
Salt

Wash twice the barnyard millet with water and keep aside.

Heat enough oil, let splutters mustard seeds,urad dal and add the asafoetida powder,curry leaves and grated ginger, fry for few minutes.

Add immediately the onions,slit opened green chillies and cook until the onions turns transculent.

Add now the vegetable and cook for few minutes, add the salt and cook again until the veggies shrinks a bit.

Vegetable upma, millet upma

Cook everything in simmer with lid closed,until the veggies gets well cooked.

Add a cup of water and bring it to boil.

Finally add the barnyard millet to the vegetable mixture and cook everything in medium flame until the millet gets well cooked.

Its indeed a very tasteful upma. I make it during navaratri, though the type of veggies used varies at that time.
