Life is becoming so busy obviously this keeps me super busy, however i couldnt give up blogging for any other reasons. Yes blogging is one of my passion, am running this year's bakethon again as i love baking very much. Baking is definitely a stress burster, its completely therapeutic if you are running like headless chicken with your daily routine. Baking, this word itself makes me happy. And this year's Bake-a-thon is going to be some delightful bakes. I will be posting three baked goodies per week, obviously dont forget to visit my space on mondays, wednesdays and fridays. For the first day of this year's bake-a-thon, am posting some super spongy black currants loaded vanilla mini cake. Very simple to make, you can bake this ultimate cakes for your evening snacks or for after a meal desserts with less efforts.
Recently, i picked a packet of dried black currants from the supermarket to bake some quick breads with it. But i couldnt resist to add them while preparing a simple vanilla cake, adding those dried black currants turned this cake more catchy with an interesting crumb while having this cake. Served along with a cup tea or coffee, one can enjoy thoroughly this super soft cake without any fuss. Seriously i felt that adding black currants to this cake turned this cake more pleasing and those black bites gives a cute look to this simple cake.
2cups Flour
2tsp Baking powder
1cup Milk
100grams Butter
1cup Sugar
2 Large eggs (beaten)
1/4cup Black Currants
Preheat the oven to 350F and grease a mini cake pan and keep aside.
Melt together the butter and sugar, once the butter melts, remove the pan from the fire. Let it cool slightly before beating the eggs.
Add the eggs to the melted butter-sugar mixture and whisk well.
Sift flour, baking powder in a bowl. Add the wet ingredients and beat everything together gently.
Fold in the black currants and spoon the cake mixture to the already prepared cake pan.
Bake for 20-25minutes until a skewer inserted comes out clean.
Once the cake gets cool completely, remove the cake from the pan.
Serve with your favourite coffee or tea.
