Atta cake, this recipe calls for whole wheat flour aka atta, the flour we usually use for making rotis. This cake is eggless, butterless and i used condensed milk,dates puree to replace the egg and oil for butter. Apart from it this cake goes for simple and usual ingredients easily available in your pantry. I have added walnuts to give a nutty texture to this simple cake. You can add tutti fruity bites, chocolate chips or else more nuts as per your desire. However adding chocolate chips will definitely make this cake very interesting. Since i want to feed my kids with dates, i prepared a simple puree with dates cooked in water, if you dont have dates just replace it with apple puree.

Eggless Walnut-Black Pepper Cookies
I was searching for some spicy cookie with peppercorns, while googling i found an interesting cookies here. Initially i was intrigued about the addition of ground black pepperin cookies but trust me this cookies tastes absolutely nutty, mildly hot with mild sweetness. Actually the addition of black pepper gives a subtle hotness to this delicious cookies. Whole walnuts grounded as coarse powder along with all purpose flour makes this fabulous cookies though the original recipe goes a cup walnuts but i went for half a cup of walnuts, hence i couldnt stop adding some flour to make this scrumptious cookies.

My craving for chocolate pulled me to check for a gluten free, oil free and hassle free muffins, i googled immediately and ended up with a blender friendly recipe in which i made few changes according to our tastebuds. Trust me this muffins are super quick and very easy to make. This flourless muffins will definitely satisfy your sweet tooth, yes this muffins eventhough without flour, came out extremely spongy, moist and ultimate. You doesnt need any specific gadget, just a blender is quite enough. You can even go for a one bowl preparation, i used almond meal instead of flour and peanut butter instead of butter. If you want to make the same muffins with flour, just go on. However you wont miss the flour in this muffins.

Spicy Onion Buns with Coriander Leaves
Bored of baking always sugar loaded buns or dinner rolls, then give a try to this spicy sauteed onions and finely chopped coriander leaves loaded flavourful buns.This buns goes immediately to my favourite breads list. Just love the flavour of the sauteed onions in this buns. You cant just stop with one, when served along with herbed cheese or cream cheese, this buns makes an excellent meal as well. I used coriander leaves to give an incredible aroma to this buns. If you want to skip it or replace it with any other herbs, just go on. Parsley and rosemary leaves works awesome in this buns. However this buns are dangerously addictive.

Dryfruits Tea Time Cake
My husband is an ardent fan of dry fruits cake, obviously my pantry will always have dry fruits and nuts. One of his favourite cake is fruits loaded cake, this cake ressembles almost like pound cake, though less egg is used. This recipe calls for butter eventhough you can replace it very well with any cooking oil. Actually i do this cake quite often by replacing half of the quantity of butter with oil. You doesnt need to soak the fruits overnite or in warm syrup, just add directly to the cake batter and bake it.However i couldnt stop myself adding some freshly squeezed orange juice and orange zest to the cake butter. This cake is quite simple to prepare, but trust me if you love loads of dry fruits in your cake then this cake is for you.

We love rustic style breads, these breads asks for less efforts and trust me the end result will keep you wowwing. I have been baking breads at home since a long, actually my H is a great fan of rustic breads. He can start his day with this bread slices with his favourite spread, rustic breads makes excellent sandwiches as well. Though am not a big fan of rustic breads, i love the sandwiches made with this bread. Anything filled inside the two slices of this bread makes super filling sandwiches. Its been a while i baked cookies with oats as main ingredient, this cuties are my recent bakes which i simply baked out easily and quickly with quick cooking oats and butter scotch chips. Adding butterscotch chips makes this cookies more delicious, obviously oats makes these cookies more nutritious and highly rich in fibre. As usual these cookies are eggless but not butter free, if you want to make some scrumptious cookies dont skip butter. Butter plays an important role in this cookies and its winter here so we love to add some fat in our daily meal or bakes just to tolerate the nasty chilled weather. Since few days, the weather in Paris is very much down and its quite hard to tolerate. We keep ourself comforting by indulging some fat loaded foods just to make us happy.

Soyakheema Pizza Pinwheels
Making pizza at home is definitely an interesting one as this pizza dough doesnt need any specific ingredients to get ready, usual basic ingredients makes pizza dough. And this dough takes very less time to get ready though the resting time depends upon the weather and the humidity. I have baked this soya kheema stuffed pizza pinwheels for a weekly baking event few weeks back, but unfortunately i couldnt write a post before the deadline. Obviously this pizza pinwheels were sitting in my draft for a while. Finally am writing this post today as am running 13 days of baking for this month of december. Fudgy Jam Brownies
Brownies, this rich chocolate loaded baked dessert are quite famous for their fudgy texture. Usually served for desserts for their fudgy or cakey texture, these square shaped brownies are seriously my kids favourite. They can just have brownies anytime of the day as they just love it to the core. Obviously everytime i plan something with chocolates i usually end up with brownies. Needless to say how we love brownies at home. Actually i had a small bottle of strawberry jam sitting for a while in my fridge as none want to have in their bread toast. One Bowl Coffee Cake
I love coffee flavoured bakes, especially in cakes. I will be posting baking goodies during this month of december as am running 13 days of Bakeathon. Obviously thrice a week, you may able to see different bakes in my space. For the first day am kick starting this year's Bakeathon with a sweet note that too with my favourite coffee flavoured cake. This coffee cake was sitting in my draft for more than a month, yes i baked this cake for a baking event but i couldnt able to post it in time, but never mind finally i can post this super flavourful spongy cake for Bakeathon. Its time to clear my draft posts especially the baked goodies sitting for a while.Seriously i need to thank Srivalli for pulling me to clear my drafts. Pasta Potato Cutlet
If i want to feed vegetables easily to my kids, i'll just go for tikkis aka cutlets. Mashed vegetables work out awesome for making shallow fried patties and we can just feed anyone with any vegetable. I seriously want to give a try to cutlets prepared with cooked pastas, and finally i did it. Again i used alphabet pasta for making this easy and dangerously addictive cutlets. Its was raining cats and dogs here, obviously once we are back from work and school everyone at home askssomething warm and crispy for their snacks. Since tikki or cutlets can be prepared very much earlier, i prepared the cutlets sunday afternoon and kept in fridge to fry for monday evening. Since pasta and potato works awesome in this tikkis, this cutlets came out extremely prefect to enjoy warm with a cup of tea or coffee.

Spaghetti & Vegetable Pancake
As i told earlier,my kids just adore pastas in any form. Serve them anytime of the day with pasta they will never says no. After making a simple and super creamy pasta in mug, my today's post goes for an another interesting and definitely a kid's friendly dish. Yes my today's recipe goes for spaghetti pancakes. Very quick to make with simple ingredients. This pancakes goes usually for cooked spaghetti along with parmesan cheese and egg, since i want to feed my kids somehow healthy, i couldnt stop myself adding some grated carrot, celery and zucchini to make this delicious spaghetti pancake more colourful,catchy and healthy as well.

Cheesy Alphabet Pasta in a Mug
Pasta, this word itself makes my kids happy, they can have pasta everyday without any fuss. Dunno why they go crazy if i says pasta for today's lunch. Obviously i'll cook pasta atleast twice a week at home and serve with different sauce or else simply some baked dish with pastas. Earlier if i make pasta for lunch or dinner, i'll keep aside a bowl of rice for me as i dont like pastas that much. But i think nowadays its not a big deal for me to have pastas as am trying to like them as much as like my kids. Pomegranate Molasses/Pomegranate Sauce
I was looking for a prefect molasses to prepare at home, some molasses are quite interesting to make at home, especially fruit based molasses. Actually i seriously want to give a try to a small batch of pomegranate molasses aka pomegranate sauce with fresh pomegranate pearls. Finally i made it, yes i prepared a small bottle of catchy and a very delicious molasses with pomegranate pearls at home. Its really very easy to make though the cooking part goes for a bit long than the preparation part. However its really worth to give a try to this eye pleasing sauce.Pomegranate molasses is an essential ingredient in Middle Eastern cooking though this sauce is quite interesting to relish with French crepes or drizzled over a slice of simple vanilla cake.

Mumbo Sauce/Mambo Sauce
While i was searching for an easy breezy sauce to serve along with some french fries through google master, i got hooked to this new sauce which is completely unknown for me. Its seems this mumbo sauce or mambo sauce have its origin from Chinese take out restaurants in USA especially in Washington and its surrounding area. This sauce is an excelllent condiment to serve along with fried foods or else with crunchy vegetables, actually i loved it with some raw cauliflower florets. This red sauce is quickly prepared with easy ingredients like tomato ketchup and it is flavoured with paprika powder, vinegar,hot sauce with sugar. This sauce tastes mildly hot with sweetness, hence you can serve it easily to anyone.

Honey Peanut Butter Sauce
Though many varieties of store bought sauces do exists, nothing can beat the freshly home made, preservative free sauces to enjoy with fritters or with finger foods. Homemade sauces are easy to make some sauces even goes for no cooking, just whisk the ingredients which you need to make a quick sauce and your sauce is ready to relish with your favourite food. Eggless Cinnamon French Toast
Breakfast, actualy am a not breakfast person though am trying to eat atleast a bread loaf with my usual bowl of tea everyday. Everybody starts their culinary experience with easy dishes, most of us would have started the first recipe with eggs. Yes egg omelette is one of most favourite dish of many especially first trial in our mom's or in our own kitchen. Aval aka rice flakes makes excellent snacks just with some grated coconut and sugar. My pantry will always have rice flakes, earlier i always get white rice flakes from stores but as a health nut am converting most of our usual dishes with healthy twist. Obviously instead of getting white rice flakes nowadays i buy red rice flakes and you can make varieties of dishes out this healthy rice flakes. Spicy Wheat Diamond Cuts/Sesame Seeds and Wheat Diamond Cuts
Am an ardent fan of deep fried snacks but now am keeping myself away from it. But kids just love crispy fritters, obviously we cant say no to them though they have rarely deep fried snacks. When my lil one asked for a spicy snacks, i couldnt say no to him, and prepared this wheat flour based diamond cuts with loads of sesame seeds and kasuri methi. Usually we make diamond cuts with maida or all purpose flour, my today's post of this diamond cuts calls for whole wheat flour, yes i deduced the quantity of maida and went for whole wheat flour, semolina to make them more healthy and crunchy. Sesame seeds and kasuri methi added to the dough makes this diamond cuts very flavourful and absolutely nutty.

Pearl Millet Meethi Seviyan/Pearl Millet Sweet Vermicelli
Meethi Seviyan is an Indian dessert made during festival days, seviyan means vermicelli and Meetha/Meethi/Mithi means sweet hence the name of the dish 'Meetha Seviyan'.Vermicelli, these thin hair like spaghetti used in Indian cuisine for making both savoury and sweet dishes. Sweet vermicelli makes an excellent dessert as well and the cooking process of this sweet goes for simple preparation. Well roasted vermicelli cooked with sugar syrup and topped with varieties of nuts. This sweet is made specially during the holy ramadan days.Coming to this Meetha seviyan, this sweet is prepared with both sugar and jaggery, i opted for jaggery. We loved it to the core and the jaggery syrup added to make this sweet gives an incredible taste and colour to this simple sweet.

Samai Semiya Kheer/Little Millet Vermicelli Kheer
During my last trip to India, i was surprised to see the varieties of vermicelli available in stores, especially different millet based vermicellis. Actually i can see many peoples even in our family started replacing the rice with millets now. Coming to my today's recipe, this little millet vermicelli kheer is quite a rich,creamy and very delightful dessert or a prasadam for a Pooja or as a sweet to serve after a meal for a special occasion. Since this little millet vermicelli are quite thin, the cooking process goes for a quick,easy and less time. I prepared this little millet vermicelli kheer for Ayudha pooja's celebration, obviously a healthy prasadam to enjoy the goodness of this millets.

Parath Parantha - 16 Layered Paratha
Parath Parantha - this paratha is quite famous in Delhi especially from Prathen Wali Gali in Chandni Chowk, Delhi. Parath means layers, hence this paratha is named as Parath Parantha. These parathas can be made in any size with different shapes, though i sticked with a square shaped one. The best part of this paratha is the spice mix used in making layers.This paratha have 16 layers, once rolled the dough, a spice mix with chilly powder, cumin powder, garam masala and chaat masala is spread over the rolled dough and cut it as 16 pieces. Once stacked, this paratha is rolled either as round or square shaped paratha.

Beguni - Bengali Eggplant Fritters
Beguni aka Bengali eggplant fritters makes an excellent evening snacks, the traditional way of enjoying this beguni is to serve this fritters with puffed rice and green chillies.The dish may be prepared by coating eggplant with besan paste and then frying the pieces in oil.The eggplant is usually cut lengthwise and are dipped in a batter of Bengal gram flour with salt and turmeric, and deep-fried in mustard oil. Di San Xian - Chinese Stirfried Vegetables
Di San Xian which is literally known as three treasures of the ground, this dish goes for three different vegetables and they are potato, eggplant and green pepper.This stir fried potato, eggplants and green pepper dish aka Di San Xian is a popular dish of North Eastern part of China, as these three vegetables are most easily and the most common vegetables you can find at any market in China.This dish is very much served in Chinese restaurant and they use large pieces of this veggies. I picked this recipe from Omnivores Cookbook and the author of this site shared a healthier way of making this dish. Actually she sliced the potatoes and eggplants as thin slices to deep fry them quickly so that they absorbs less quantity of oil. Also frying with less oil gives them a slightly charred look and tender texture as much as like they are served in restaurant.

Dahi Baingan/Dahi Baigana
Dahi baingana is a traditional Oriya recipe prepared simply with yogurt, deep fried eggplants and tempered with mustard seeds, curry leaves. This eggplant in yogurt sauce is spiced simply with chopped green chillies, roasted cumin powder and thinly sliced ginger. Served along with a hot steaming rice, you can have this incredible dish or else simply as a snack if you love eggplants. This dahi baigana gets ready very much quickly than you can imagine. One of the easiest and the simplest dish i have ever cooked with eggplants. Many varieties of dahi baigana exists, i went on searching for a prefect traditional Odiya style dahi baigana and finally i landed to Oriya Food and loved the simplicity of this dish.

Maladu/Maa Laddoo/Pottukadalai Laddoo
South Indians makes couple of easy breezy laddoos quickly with dals and semolina. After the popular rava laddoo aka semolina laddoos, they do exists different dal based laddoos. My today's recipe goes for Maladu aka pottukadalai laddoo, pottukadalai is roasted grams which we usually make chutney out of this grams. This maladu goes for just five ingredients and you can make this laddoos in a jiffy. Maladu makes an excellent sweets to serve even to sudden guests as this lipsmacking laddoos are very much quick to make. The main ingredient for making this laddoo is melted ghee, the addition of ghee in this laddoo makes this maladu more tastier than the usual easy laddoos in which people use milk instead of melted ghee. However making this fried gram laddoos using melted ghee atleast once a while will definitely satisfy everyone's tastebuds.

Nowadays am getting very busy and obviously am so lazy to cook and click, thank god to all these posts sitting in my drafts. One among those posts is this Gulkhand Rava sheera, sheera is nothing our own Kesari. You can dish out kesari within few minutes and this dessert go usually for easy cooking. Semolina, sugar, ghee and nuts is quite enough to whip out this lipsmacking rava sheera, some add fruits while others add saffron or food colour to give an attractive colour to this simple dessert.

It is a common feature at Hyderabadi weddingsKhubani or Khobani is Urdu for apricot; it is believed that apricots were introduced to the subcontinent by Central Asians.Dried apricots from Afghanistan are especially prized for their flavor. Khubani ka meetha is a very popular dessert of Hyderabadi cuisine.Preparation of the dish involves boiling apricots with syrup until they assume the consistency of a thick soup or compote. The dessert is topped with blanched almonds or apricot kernels, and is traditionally garnished with malai, an extra thick cream, ideally from buffalo milk, but also with custard or ice cream.

Mushroom Cutlet/Mushroom Tikki
Cutlets aka tikkis makes an excellent party starters or snacks when served along with chutney or simply with ketchup. I tried making different dishes and fritters with mushroom, everytime i make mushrooms at home,my younger one says always 'no' to mushroom. But finally i got a prefect dish to feed him easily even without his knowledge. Yes this mushroom cutlet,he just enjoyed this crispy and sizzling mushroom tikki with his favourite ketchup sauce. Obviously i do make whenever i get button mushrooms from the farmer's market. Potatoes and pan sauteed mushrooms,onions coated with bread crumbs, flavoured with garam masala, chopped green chillies makes this fantabulous tikkis.
Amla & Pomegranate Cooler
Summer is incomplete without chilled drinks and an anniversary party is incomplete without a welcome drink or cocktail. Though alcholic and non alcholic storebought beverages exists,nothing can beat the homemade healthy drinks. Here comes one among those healthy drink, a quick,easy breezy, an excellent body cooler and also hassle free cooler simply prepared with Amla. Usually i do simple juice with amla aka gooseberries,this time i want to make it something differently with the juice,hence i tried adding pomegranate pearls, soaked sabja seeds aka basil seeds. Trust me this cooler is an excellent drink to serve anyone whoever visits you. Amla dont dominate much in this drink, since pomegranate seeds sits for a while in prepared amla cooler, they gives a mild subtle flavor to this cooler.

Cheesy Chickpeas Puff - #MonsoonMojo
We usually make puffs with different fillings, i have already tried from sweet to savoury version with various interesting fillings. But this time, i couldnt resist to give a try with an another interesting filling which i simply prepared with a spicy chickpeas masala. Puff with chickpeas masala sounds bit different na, but trust me they came out extremely delicious and you cant just stop with one puff. Once again the filling i went for this puff is seriously an easy one. No chopping, no sauting for hours, just some mashed chickpeas with simple spices is quite enough to finish the chickpeas filling. Chickpeas Summer Salad
Few days back, suddenly it was too hot here and i cant even stand in my kitchen to cook for our dinner. Since none at home want to have their dinner, instead of going to bed with empty stomach, i quickly prepared this simple, quick and very refreshing salad with chickpeas to serve for our dinner. We just finished having a small bowl of salad and went to bed with a satisfying dinner. This salad makes an excellent filling dinner, actually i love to make these kind of easy breezy nutritious salads for our lunch or for our dinner. Summer salads are easy to dish out depending upon the vegetables you can find in your fridge. Just add any vegetables, whatever you want to add in a bowl of salad and make your healthy bowl of summer salad.

When i picked one bite appetizier for this week's blogging marathon theme, i want to give a try to something simple,quick and definitely an easy pakora with grated mixed vegetables. Actually this pakoras makes an excellent starter for a party menu, but still you can serve these crispy pakodas for your snacks and also as side dish for rice and dal. These pakoras suits absolutely prefect for any occasions, if you dont like chopping the vegetables, just grate them. Very simple pakoras to make, trust me these pakoras is our family favourite. Zucchini Moongdal Kootu/Vegan Zucchini Kootu
Kootu, this dal based thick gravy makes an excellent dish when served along with rice and papads. I can die for a plate of hot warming rice topped with a simple kootu and ghee served along with papads, my comforting food. So making kootu with different dals and vegetables been quite a routine at home. My today's recipe is one of the simplest and quickest kootu dish which i never fail to prepare atleast once a week with different vegetables. But today's post is going to be with Zucchini, this zero calorie vegetables are quite versatile and you can dish out many beautiful dishes out this squash. Usually i make kootu with pressure cooker but this time i cooked the yellow moong dal separately.

Masoor Dal Sambar Bath
I never get bored of making one pot meal, actually one pot meal makes the life easier and you can happily feed your family without any hassle.I have already shared many varieties of one pot meal but still they are so many varieties of one pot meal to share. One of my recent trial with masoor dal was this irresistible sambar bath. Sambar is a routine dal based gravy at home, we either make sambar with toor dal or moong dal else with a combination of both dals. I cook very rarely with masoor dal,dunno why i never been attracted by this dal. Recently my H went for Indian grocery and picked a packet of masoordal instead of toor dal, obviously i have to finish the packet of masoordal. Hence i tried my hands with masoor dal sambar bath.

Eggless Butterless Carrot & Orange Muffins
Once summer starts here, we dont get oranges as they are seasonal fruits here, before the oranges gets disappear from my nearby fruit stall, i want to make some muffins to pack them for our after lunch snacks. Since i had some carrots sitting my fridge, i baked out this orange and carrot muffins. They came out extremely good and everyone just enjoyed them. Mild orange flavour with grated carrot makes excellent spongy and very moist muffins to enjoy thoroughly with a cup of tea or coffee. You can start your day very well with these muffins as they are loaded with healthy stuffs in it. They are eggless and also butterless, obviously a fabulous guilt free muffins.These muffins makes an incredible dessert when served along with few scoops of icecream or else simply topped with cream cheese frosting.

Apple Crumble
If your kids dont like apples, bake a cake or a crumble, am sure they will never ever says 'no' to apple. Apple is my favourite fruit, but since four years i couldnt eat them without cooking. Suddenly am allergic to my favourite fruit, unfortunately i couldnt enjoy the goodness of apple without cooking or baking them. I dont have any other option, obviously whenever i crave for apple, either i make apple sauce with them or else bake as a cake or crumble. Crumble with apples makes an excellent dessert after a heavy meal. My today's crumble goes for a buttery topping but you can still make the crumble with wholegrains like oats, quinoa flakes etc.

Eggless Mango & Tutti Frutti Muffins
Having muffins for breakfast will definitely fill a hungry tummy without much efforts, obviously i love to bake often muffins than cake or bread. Muffins are easy to carry that too when you are late to your work. Mango, this fruit is my favourite after pineapple and jackfruit. Obviously i love make variety of foods with this fruit. Anything baked with mango will surely satisfy my tastebuds. But this time, since i want to make a quick and easy breezy baked goodies, i opted for this egg free and completely butterfree mango muffins with tutti frutti chunks. Whole Brinjal Fry - No Onion No Garlic
My today's recipe sounds almost like Bharwan baingan, the famous stuffed eggplant curry. But my version is definitely an easiest one, you can prepare this whole brinjal fry within few minutes, no grinding, no chopping and no sauting for hours. Just a simple spice mix makes these incredible looking brinjal fry. Actually this recipe goes for just three ingredients eventhough oil and salt is used in this fry.
